Strawberry Cake?

This year my girlfriend wants strawberry cake for her birhtday later this week. Last year it was lemon and the year before it was chocolate.

I look at a few recipes here on CC but wanted to know if anyone had a GREAT recipe or suggestions or tips I could use.

I have a recipe posted for Double Strawberry Shortcake that is very popular. I usually make it with whipped cream frosting, as the recipe says, but I have made it with BC before, also and it was just as good.

Here is my recipe:

Strawberry Cake

1 (18.25 ounce) package white cake mix (I use DH)
1 (3 ounce) package of strawberry jello
2/3 cup vegetable oil
4 eggs
3 Tbsp all-purpose flour
4 ounces frozen or fresh strawberries (if using frozen, thaw and drain)
1/2 cup buttermilk

Preheat oven to 325 degrees. Grease 2 8 inch cake pans.
Combine cake mix, gelatin, oil, eggs, flour, strawberries and buttermilk. Mix at medium speed for 2 mins. Pour batter into prepared pans.
Bake till toothpick comes out clean or with a few crumbs.

I ice mine with the crusting cream cheese icing and it is fabulous!

Here is my cheater cheater icon_biggrin.gif way of making a WONDERFUL and super moist strawberry cake:

1 box Duncan Hines Strawberry Supreme cake mix

1 3 oz. package of Strawberry Jello (or store brand)

3/4 cup of your favorite brand French Vanilla liquid coffee creamer

3/4 cup water

3 eggs

1/3 cup oil

Mix all together, bake per directions on package. I usually use pureed Strawberry Preserves as the filling, chocolate icing, then dip strawberries in chocolate and spread the leftover chocolate on top and let it drip down the sides.

Thank you ladies but does anyone have tips for use with a scratch cake mix?

This girlfriend is so particular that she despises box cake and can tell everytime I make it for her no matter how hard I try to deny it icon_sad.gif

Your girlfriend sounds like me! I know there is a scratch strawberry cake on here that used Jell-o, but I have not made it because of the artificial flavors in the Jell-o are very prominent to my taste buds. Would she be satisfied with a vanilla cake and home-made strawbery filling? If so I can point you in the right direction!

I tried that not that long ago....Loved It. My husband said it tasted like strawberry shortcake smells =D My only problem was the edges turned out hard. I'm actually making it today for my sons 4 1/2 birthday ( don't ask...dh idea ), think I'll turn my oven down and see if that helps. Last time I used cream cheese frosting this time I think I'm going to try ganache =P

I recently made the scratch strawberry cake with Jello too. But if your friend does not like anything artificial I would not use it, the Jello does come through in the flavor. And I also found the edges browned in a gooey sort of way, probably the gelatin in the Jello. The cake was way too sweet for me but then again I probably like my baked goods less sweet than most.

Couldn't you leave out the Jello and use Strawberry Juice??? I made a strawberry cake for my daughter, it started with a boxed strawberry cake, but I had to thaw frozen strawberries and put them through a strainer. It was wonderful. One lady that my husband works with complained that the cake was too moist, I have the idea that she likes my husband more than she should, and just needed a reason to think that I'm not perfect.

I normally use William Sonoma's classic butter cake recipe and a half of jar of smuckers strawberry preserve. I warm preserve in small boiler on the stove and finely mash the strawberry pieces and fold into the mix at the end. Then I boil the rest of the preserve to crumb coat the cake. I use a whipped cream icing. Kind of sweet!

Thank you again for all the wondful ideas!!! Maybe I'll just make strawberry shortcake instead. But now I wonder if they sell strawberry extracts??? I could use that in place of vanilla.

Yes, my local grocery carried strawberry extract - had to use a lot, though....

If not, any decorating store would certainly carry it icon_smile.gif
