Strawberry Glaze Filling

I usually use my strawberry glaze filling as is. Has anyone tried to put slices of real strawberries inside the filling? How did it turn out? Is it better? Does it need refridgeration then?

I am not sure for your answer. All I can say is when I make it that way for my strawberry shortcake (Before my decorating happened) I always refrigerated them thinking the strawberries wouldn't be able to take it outside the fridge. So I don't know if this will help or not. I hope you get your answer so I will know for sure. Good LUCK thumbs_up.gif

I have done this before with the strawberry gel sleeve you can get at a cake decorating store. I was told it was great. I plan on doing it again tonight.

Cake_Geek, did your cake need refrigeration? The cake I'm suppose to do is going to have MMF accents on it and I was going to try to put fresh strawberries mixed inside the strawberry gel. I know sometimes if I don't have room in my fridge and I use just the gel only, I don't put the cake in the fridge and it is alright. I'm just not sure about the fresh strawberries mixed in with it? I'm at a loss what to do. Thanks for all your help!

cmmom, I've done this before in the heat of a TN summer. I did my layers with a french vanilla cake, with sliced fresh strawberries mixed into strawberry glaze I picked up at the grocery store. The glaze is a red kind of gel looking stuff, comes in a little pint container and is usually somewhere in the deli or produce section by the angel food cakes. I just washed, dried and cut up my strawberries and gently folded them into the glaze and then put it on the cake. I did crumb coat both the top and the bottom of the middles of the cake before I put the strawberry glaze mix on the cake and assembled as normal. Just be sure to put a BC dam on your cake center so you don't get any seepage from the glaze. I did not refrigerate mine and delivered it the next day. The family said they kept it in the refrigerator after the first few days (they had leftovers, IMAGINE!!) to keep the cake fresh and the berries fresh but initially I wouldn't refrigerate it. HTH!!
