I am thinking about ordering the 50 lb tub. Does anyone know how long it will stay fresh? Can you freeze it? I just don't want to sink that much money into something that could go bad before I use it. Thanks.

It stays good for about 1 year. I use those big 5# ice cream buckets, cleaned out of course, and freeze it in those. I know I won't make it through a 50# box in 1 year. Now I don't even use it since I switched to SMBC.

I buy a 50 lb. cube and divide it up into 14 oz. portions (that's the weight of 2 cups of the hi ratio). I put it in 16oz. plastic containers that I buy 3/$1. I think the last time I did it, I got about 55 individual containers with enough left over to fill a small margarine tub.

I store them in a larger plastic tub out of direct light and heat in a cool room. They last at least 1 year that way. I think the last time, I used up my last container at about the 20 month mark and it was fine--same white color, odorless, etc.

Air, heat, and light are the enemies and if you can keep them away, you're good to go.

I do about the same as BC does. I package mine in 2lb. 13 oz. packages (which is what my icing recipe calls for) that way I can just grab one whenever I need to make icing - no fuss. Just dump the whole thing in the bowl and go!

Yes, you can freeze it!

I buy the 12 pound box from Global Sugar, divide it up into the portions I need for my BC recipe. Wrap in plastic wrap, freeze and then seal in Food Saver bags. I have had some frozen for over six months and it was perfect when I needed to use it.

I am a hobby baker and there is no way that I could use 12 pounds in a short time.
