Cake Pricing Help!!!

Awhen pricing a cake i always use the wilton cake serving chart then multiply that by what im charging (i.e. 6in. round serves 12 and i charge $2.50/serving so that is $30) should that price include my fondant or not...or should i add the price of the fondant to it?]

Yes, I think that you should add the price of the fondant to your serving price, it's costing you more.

 

A 5# bucket of fondant runs me about $17.00, so that’s 80 oz at about 0.2125 or $0.21 an oz.  A 6” needs about 18 oz to cover it which amounts to about 3.825 or $3.83.

 

So if I was charging $2.50 per serving, I would add $3.83 to that which equals $6.33 per serving.

 

This is a method that I use,  It may not work for everyone but I hope this helps :wink:

Sorry, I did that wrong, it's been a long morning and I dont want to confuse you , the $3.83 for the fondant to cover a 6" cake would be added to the cost to make the cake. Basic fondant covered cakes run from $4.50 to $6.50 per serving where I'm from.

Costs: When figuring out your costs, you include all your costs. If fondant is one of your costs, then include it. You also have other costs of doing business that factor into the price of a cake like talking to customers - not all customers order cake, but that was still time spent running your business. Calculating the price of each and every cake may not be something everyone can reasonably do. It's easier, and perhaps more practical, to evaluate your costs based over the total time spent working for the month, the total cost of supplies , etc..

Prices: But to actually price your cake, you'd be wanting to learn what similar cake sell for to determine the market value of your cakes. That means looking into prices of competitors. Be very careful about using home bakers' prices as so many of them are not charging enough. It's usually safer to use the prices of brick and mortar bakeries. Similar price for similar work -- adjust for quality - do they do better work? Then your cake price would be a little less. Do you use higher quality ingredients, then that would add to your price.

Also, if you're new, you may not know that you can't just get pricing by looking at their website in most cases. Most bakeries post base prices only. My base price is $5 per serving, but most cakes are well over that - more like $7 per serving.
