AI'm wanting to make wired stars, I need them to be white chocolate colour, milk chocolate colour and dark chocolate colour. What is the best to use to get them to harden and stay upright?

AOk thanks, I was also referring to whether I should use fondant or modelling chocolate?

Fondant will take time to set, and should be mixed with Tylo powder to add strength otherwise they'll just flop everywhere. If I make fondant wired shapes I roll them as thin as I can (just because I prefer the look of them that way) and will leave them for a a day or so to harden. Roll them thicker and you will have to leave them longer.

 

Modelling chocolate needs no setting time, but can be a pita to work with if you have warm hands. I'm sitting here typing with hands like ice blocks, but I can guarantee if I took out my mc I'd have hands like radiators. Every time. It is seriously the only time my hands will warm up; it's like they know :)

 

The other thing to consider is heat. Fondant/tylo will hold up in a warm environment, mc may have issues. I made a large dragon out of mc last weekend, and his wings were fine in my kitchen, but once he'd sat in the party room with all those people for a couple of hours they started looking like he was a very tired dragon...

AOk thanks lizzybug78! The heat issue is also a problem with my hands and the weather at the moment it's very humid here in Australia! And the cake would be sitting out for a few hours too!

I live in the islands... humidity at a whole other level! Gumpaste is the only thing that sets up for me here. I've heard of mixing gumpaste and modeling chocolate before -- haven't tried it myself. Maybe if you had time, you could try that out?

AOk I might try that too I do have time and I have the modelling chocolate already made but I'm struggling with it setting to any sort of acceptable degree, thanks :)
