First banana cake and I don't know if I can keep it refrigerated until October 12th without it affecting the bananas. Will it turn black and gross like bananas do with time?? Really need your advice so that I can bake another one in time.

It would be better to cook a cake with bananas pretty close to the time that you need it. Did you say you wanted to refrigerate the cake or did you mean to say freeze the cake instead? I know some people cook their cakes ahead of time and freeze but not sure if they freeze cakes with bananas in them.
yes....it's in the fridge now and it looks, smells and tastes amazing! I kinda added some stuff and I cannot remember how much or what and I'm afraid that I can't duplicate it! I will freeze it just in case and will probably make another one closer to the wedding.
Now I am sitting here pondering what can stay in the refrigerator for a month besides baking soda and condiments.
