Help!!!One layer Angry bird cake

Hi all,

 I have a customer who want a small cake  to feed twelve , she just asked for a strawberry sponge cake one 8 inch layer covered in fondant with an angry bird theme. I am new to this and a bit  worried . First off what exactly is a strawberry  sponge cake?. I thought it was a victorian sponge with a strawberry filling.  if she is wanting a single layer cake how is that going to work. I feel with my cakes coming out  at less than two inches after leveling it might turn out looking not so good in terms of hight and the look she is going for.

I have sent an email advising that she should go for a two layer six inch cake and would look better and now no response from her. someone tell me if I am wrong . I don't want to sound unprofessional. feeling bad :-(

You could torte your one layer and make it a bit higher (technically making it into a two layer). You could add a strawberry puree to your sponge cake. I am guessing since she only wants the one layer that she doesn't want any type of filling. I agree that if it is anything other than a sheet cake, I tend to like the look of a two layer better, but I have never had anyone ask for a 1 layer before.

I do have a question about the whole layering of cakes. I want to layer a 12x18 cake with a 12x18 will I née to add dowels in the cake? I also. Willie filling the cake with Dulce de leche.

Also can I make the two cakes tonight and they will be fresh for a party I am having on Saturday afternoon?

I have never done it that far in advance. I make mine Wednesday night at the earliest. I know some people do make them further in advance and freeze them.

For just a regular 2 layer sheet cake like that, no. You don't need dowels.

So with the two cakes that are 12x18 I don't need dowels? And it will have a filling as well so they will be fine just sitting on top on each other?

It's called a layer cake.  You only need dowels when stacking tiers or more layers over 4" in height, then you'd also need a support board in between.

I wonder if maybe the woman who ordered from you meant one tier. as in one tier cake with several layers inside. I just made a wedding cake at home and I had to explain that to almost all of my family several times the differences between tiers and layers.

Hi Kaylawaylalayla,

I have been thinking about that as well because I do know a few people who don't know there is a difference between a tier and a layer.  well what can I say

I had someone ask for a 1 Layer Cake a few weeks ago too and I asked her you do mean 1 Tier? She laughed and said yes Thank God you know what I mean lol. Always ask when they say Layer....a Red Flag should go up so always ask.  Good Luck

I guess when in doubt always ask just to make sure  . I should haveicon_smile.gif . But sometimes you just expect that people would know these things
