Hello everyone, I'm hoping someone out there can please help me I usually make my strawberry mousse with fresh strawberries, gelatin and heavy whipping cream. But I want to find a faster and easier recipe that does not require refrigeration. does anyone have any good strawberry mousse recipes out there? Thank you!

I think most non-dairy mousse recipes require tofu to help give the creaminess that the whipping cream would. If you use silken tofu (sold in the aseptic box) it does not require refrigeration. You can do a search for vegan mousse and it will be non-dairy.

Thank you, I'll look that up.

I know you were looking for help a few days ago, but I'll post any way. You will need the liquid Riches Bettercreme (note the spelling) and a strawberry jam or jelly of your choice, I use Shmuckers brand. Whip up the Betercreme (I over whipped it to make a stiffer mousse) then fold in your strawberry jam until you get your desired flavor. That is what I did for a wedding at the end of March and everyone loved it. I hope this helps!

I wish I could get some here! My Sams only sells But-R-Cream. I bought a tub of it. It is some nasty stuff. Where do you get yours? If it is Sams, do they special order it for you?

Sams should sell the Bettercream also but you have to ask for it in the bakery and it comes in a big bucket already whipped. It is Richs Bettercream and the label has a pink color on it. It is non dairy and is shelf stable it does not need to be put in the fridge. Instead of using the Richs Bettercream you could also make a batch of swiss meringue buttercream and add in strawberry jam to it to make a silky mousse... I think it would be delish ;D

** If you do buy the bucket of prewhipped Bettercream make sure they give you the bucket that says Richs BETTERCREAM not buttercream... I bought a bucket one time and they tried to give me the buttercream and I was like nooooooo bettercream you work in the bakery and you dont know the difference, lol.

I buy the liquid kind at my local Gorden Food Service but my SAMs Club does sell both the buttercream and the bettercream (the pre whipped kind) although I have never purchased it from them. When I called to check on the price they just asked that I give them 24 hours notice.
