'Velvety' yellow or white cake recipe

I have used a yellow cake recipe that is absolutely gorgeous - half the time. It is an unpredictable recipe, and an extremely inefficient use of ingredients when you're baking large amounts of cake (sometimes it comes out like wet cardboard, other times, it's sticky.) I am a semi-pro baker, and can't seem to find/create a beautiful recipe for a velvety yellow cake. I want a crumb that almost melts in your mouth - velvety is the only word I can think of.

As far as white, I just haven't found the crumb I'm looking for.

If anyone has a recipe for yellow or white cake that is moist, fluffy, velvety, please let me know. I've hit a wall as far as figuring out my own, maybe someone can help to inspire??

sylvia wienstock has a yellow cake recipe that i use for white cake

 

but she has two 'yellow' cake recipes

 

i am referencing the one that uses sour cream--i use 2.5 cups of cake flour(she used 2.25 cups)  and i put the eggs into the creamed butter/sugar mixture--i'd use this for family--i'd never fridge it though

 

for wedding cakes i use white cake mix plus wasc ingredients--but i use self rising flour--this is a workhorse blend that withstands the time needed to get the job done--and can be kept chilled--comes to room temp with a very nice texture

Thank you, I'll have to try those. I tried a recipe the other day that didn't quite have the crumb I want.
Back to the mixer I go...
