I use a yellow cake recipe with mango nectar in place of half the liquid. Then I use very thin sliced mango between two layers. Moist and delicious.

If you type mango cake in the recipes search bar 5 different recipes come up. I made this one and it turned out delicious. I didn't make the icing, however. I ganached and used fondant.

Also,

MANGO DREAM CAKE
1 18.25 oz box yellow cake mix
1/2 C. Veg oil
1 C. Ripe mango puree
1/2 C. water

TOPPING
1 8 oz container Cool Whip
1/3 C. Milk
1 (3 1/2 oz) Box instant vanilla pudding
1 C. Ripe mango puree

Chill topping and spread on cooled cake. Refrigerate at least 1 hr. before serving.

and:

MANGO CAKE

1 Box BC Super Moist yellow cake mix
1 C. Non alcoholic margarita mix
1/3 C. Veg oil
2 tsp. Grated lime peel
4 Eggs
1 Jar (1 lb 8 oz) sliced mango in extra light syrup, well-drained, diced

I've not made the last two, so can't vouch for them. At least you have a few to choose from.

If you have knowledge, let others light their candles on it.

Never fear shadows. They simply mean there's a light shining somewhere nearby.
