I've never frozen buttercream so I can't speak to that. As for the fridge, I don't put a specific expiration date on it, but I know I've kept buttercream for a couple of months and it still smells and tastes just fine. The only part that can go bad is butter and milk and it's in the fridge so I don't know what the problem would be. All that sugar acts as a preservative allowing you to even keep it on the counter for a few days. I say "no worries" about keeping it tightly covered in the fridge for a couple of months. Just be sure to taste it before you use it again.

I agree with puff. Buttercreme is pretty indestructible.

Thanks everyone. I only had it in the fridge for less than 24 hrs. Then I put it straight into a freezer bag and in the freezer. I did plan on "bringing it back to life" when I went to use it. I have kept bc in the fridge for like 3 days before and it be a little chunky I guess you'd say. It was crusting bc so I guess I should have known that
. I just added milk and put the mixer to it and it came back and tasted just as good as the day I made it.
