Has anyone done a naked cake?  I have been asked to do something with fruit and cream and I thought of doing a naked cake - not massive only two small tiers.  How do I stop the cake from drying out is my main worry?

AJust popping on quickly before I pop back out again. Roxy I use a 6 egg mix for my giant cupcake. 21/2 cups in the top and 31/2 cups in the bottom. 150 fan for between 1-11/2 hours, start checking after one hour. Catch up properly later, busy today!

I like yours better to Tiddy and think that's more around the price I would expect to pay for something like that. How did you get that cake done so quick you need to make a Ninja Tiddy tutorial showing use how to do it ninja style :lol:. Did she even apologise for being so late?

See what I mean, Facebook 'I do it cos I love it' = bane of a cake business' life! How can you tell someone that your £70 is a much fairer cost when you're dealing with that?

I love doing novelty cakes, but people like that have killed that market stone dead in my area (he's a few miles from me, along with dozens of others just like him, although he's the best looking quality I've seen). Honestly, we're saturated with it. They aren't making money, they're blocking anyone else making money, but it keeps them busy so what's the problem?

I know I'm not the only person to be seriously affected by this. How can anyone make money to pay bills when someone is working for pennies because it's fun?

It's not the customer's fault - if I was given the choice of two good products and one was much cheaper I wouldn't pay more. I'd also then assume that that was a normal price.

The fault is with people thinking it'll be lovely to have a cake 'business' and undercutting anyone around :-(

Ps - I like cuddly bears tiddy :-)

Lizzy I know what you mean but theres nothing you can do which is frustrating. I have a note on my page about pricing etc and quality, food rating etc. Can do no more :(

I don't sell cakes Lizzy but I totally get what your saying, I have a friend that sells cakes, not registered or anything and but gets loads of orders. She started out super cheap where I thought it had to be costing her to make them, then said she was having to put her prices up. With her price rise the cakes also got deeper as if to account for the extra price which to me seemed to defeat the point. Anyway so she made a holy communion cake the other week two tier 10" and 8"  around 6" high tiers, iced board with ribbon and diamonte around board, ribbon around both cakes, gumpaste rosary beads, lettering flowers and butterflies and a figure of a girl on top that cost her £5 and sold it for £50. Now if I wanted to sell my cakes and people see they are getting higher tiers and paying less money what chance would I have of them picking me to do it. She also works at the school so asks when its fathers day etc if people want to buy boxes of cupcakes. I have actually told her a lot of stuff about cakes as she didn't even know the basics and she has borrowed a lot of my cake stuff over the past couple of years while I decided I wasn't ready to sell cakes as I'm not confident enough that if someone asked me to do something I could do it  and because I wanted to practice things and get the basics right first.

Haha Kuuushi I won't tell :lol: We're going to the pictures tonight to see transformer, now I'm not really a fan of the transformers films but I'm sure I can manage to get through it with a bit of help from Mark Wahlberg and his muscles.

My Indian lady hasn't paid up yet and when I reminded her that I needed payment ASAP, she said she'd like a smaller cake. Instead of 2kg, she wants 1kg. Kathy, you can make a simple syrup (1c sugar, 1c water- boil together) and spread it with a pastry brush all around the sides.

 

Roxy, I use the hershey choc recipe for most of my chocolate cakes, unless people request mud cake, and I used it for my giant cupcake tin. I had a bit of batter left- probably would have done 4 cupcakes or so. 

 

Goodness maybe I better check out cake people on facebook in my area in case there are cheap cake ladies/gentlemen around that I need to be aware of! 

 

Roxy, so you've taught your friend all about pricing and she's still selling herself short?

Petitecat I have looked at the hershey's recipe a couple of times the past few weeks do you have to use their chocolate with it or does it work just as well with others. I didn't teach my friend about pricing other than to say work out what it costs for your ingredients and go from there, I mostly taught her cake stuff, how to make roses ( as she took an order and told them she would put roses up the cake when she had never made them before and left it to about four days before to try). she started baking cupcakes because she was buying the cake decorating magazine but not actually reading it to learn anything so wasn't using dowels etc. She went from starting to make cupcakes to selling them and big cakes in a matter of months, now I have done a few cakes of my family she is not so quick to share her info with me or tell me what cake stuff she has bought, I like that we come on here and she stuff and help each other but with her I have realised it is all pretty much one way sadly, but that's people for ya.

 

Yes bradley Cooper is a dish, I have a list a mile long :lol: and how I love to wind Mr Roxy up with it. The transformers ad was on the telly the other day and my daughter said I want one of those meaning the dinosaur so I said I don't like transformers so I'll have one of those meaning Mark Wahlberg and you should have seen the face on Mr Roxy :lol:
