Hi,

I have a co worker whos craving this great cake she use to have in Cuba. Neither one of us can spell the name of the cake. Its a cake that is very sweet almost like eating honey she describes it. She said its almost like the cake is soaked in sugar, sweet. I was wondering does anyone know the name of this cake or better yet how to make it. I am addicted to cakes from this site and would love to try to make & taste this cake she is talking about.

For what it's worth, Tres Leches is NOT a Cuban cake, it is Nicaraguan. Most Cubans in Cuba have never heard of it.

Here is a recipe for a VERY Cuban cake. It is quite a sweet, wet cake and it's spongy so go easy on the icing if you must use any. This recipe is from avery old Cuban cookbook and in Spanish so I'll do my best to translate.

"Panetela Borracha" (Drunken Sponge)

2 cups of flour
2 tsps baking powder
1/2 tsp salt
6 egg whites
1 cup of sugar
12 egg yolks
1 tsp of vanilla

Pre-heat the oven to 375F. Lightly grease and line a 13x9x2 inch baking pan. Sift the flour with the baking powder and the salt. Beat the egg whites to stiff peaks adding the sugar little by little. Beat the egg yolks in one by one and then fold in the sifted dry ingredients and finally the vanilla. Pour the batter in the pan and bake until golden, approximately 30 minutes. Let it cool. Cut it in squares and pour the following syrup on top (you can skip the cutting up part):

4 cups of sugar
2 cups of water
1 cinnamon stick
rind of 1 lemon
a drop of lemon juice
2 tsps of vanilla
1 cup of sweet wine

Put the sugar, water, cinnamon, juice and rind of the lemon on the stove. Bring to the boil and cook for about 5 minutes. Take it off the heat, add the vanilla and let it cool. Before pouring over the sponge, add the sweet wine.

Serves approximately 12
