Gluten-Free Boxed Mix For Cookies To Ship?

Must ship well. Can someone recommend a boxed mix brand, preferably that can be found at a large grocery store and not have to be ordered? Something with chocolate would be nice, nuts are okay, too, but really it's such a rare treat for the recipient, most flavors would be appreciated. Looking for a boxed mix as I don't stock GF stuff and this is going to someone I see about once a year and stuff will be stale by the next time I see him.

APeanut butter cookies a super simple. I used to make one that was only 3 ingredients; peanut butter, sugar, egg whites. It was super yummy. I would post it but unfortunately, I'm not sure what box the book is packed in. If you google for 'gluten free peanut butter cookie recipe' you will find tons of recipes. You can also add gluten free chocolate chips.

The basic peanut butter recipe is: 1 cup peanut butter, 1 cup sugar, 2 eggs. This is what I do with it to please my gluten-free eater who wanted lots of chocolate chips and more peanut butter flavor than a recipe with flour, even gf flour:

Mix 1 cup peanut butter with 1 cup of sugar, about 1/2 of it brown sugar and 1/2 white sugar, and one egg, or two if your peanut butter is very stiff. Add three handfuls of gluten-free oats (Walmart carries gf oats) and mix. Add a bag of chocolate chips, or the equivalent in different flavored chips, and another egg. (This egg is to make the chips stick to the batter, otherwise, they tend to separate.) Mix. Drop by tablespoon onto cookie sheet. Bake at 350 for 13-14 minutes or until just beginning to brown. Cool on cookie sheet until set.

 

This recipe is really delicious, ships well, is imprecise, and very hard to mess up.

AThank you all! I think I'll probably try the peanut butter cookies first as I already have everything but the GF oats and am sure I can get those locally, but will have to look for the Cherrybrook brand, too! We don't have a Whole Foods here, but there's a health food store with excellent service that will probably order it for me. I live in a medium sized city but GF baking products are not very commonly available. 2 of the 3 grocery store chains don't normally have any.
