Piping Gel That Works

I have been providing this recipe from a post by doobsd for sometime to other members. Thought it would be easier for everyone if it were in the recipe section. Want to give doobsd credit, though she didn’t post it.

Piping Gel That Works

Ingredients

  • 1/3 cup sugar
  • 1 Tbsp. cornstarch (cornflour)
  • 1/4 cup lemon juice
  • 1/4 cup water

Instructions

  1. Whisk sugar and cornstarch (cornflour) in a small saucepan.
  2. Gradually add juice and then the water. Make sure there are no lumps.
  3. Stir over medium/high heat until mixture boils and thickens.
  4. Color as desired.
  5. Will last about a month or so in the fridge.

I made this last night and used it to fill in a pond but it ran a little down the side of my cake. My pond was in the corner of a sheet cake. I've never used piping gelt befor3e so I was wondering if this is normal?? It wasn't extremely thin or runny so what is the ideal consistencey? Also, I am not at all crazy about the taste...I don't like the lemon flavor. Besides the taste and the running it still looked good.

I have tried this recipe twice now and it just bubbles like crazy, never gets thick and turns brown. What am I doing wrong???

Thank you for that recipe! I love it! it worked pretty well for my Halloween decorated cupcakes! It's so easy, quick and cheap to do! And the taste is good!

I'd assume since she didn't state icing sugar or powdered sugar, and since you're boiling it anyway, it's just granulated sugar.

This is an amazing recipe - and quick. I needed some gel for a cake decorating class and I won;t buy the store brand junk. The teacher was amazed at how identical it was to the name brand 0- and all good ingredients! Yea! Thanks

Thank you. I have added blue color to it and it is exactly like a water one... Perfect for my beach themed cake. Its too lemon taste... can we reduce the quantity of lemon in it ... or can we add pineapple/Orange  juice or somethg else in it
