I use this paste for all my flowers and figures

Flower and modelling paste

Ingredients

  • 500 grams of fondant
  • 2 teaspoons of Cellogen (or 1 teaspoon of CMC or Gum Trag)
  • 1/3 teaspoon of raw egg white
  • 2 teaspoons of Cream of Tartar

Instructions

  1. Knead the fondant until soft.
  2. Sprinkle the CMC or substitute on your work surface and knead it into the fondant.
  3. Make a small well into the fondant and pour in the egg white, knead the fondant until well combined.
  4. At this stage you may need to rub a little copha or crisco onto your work surface to stop the fondant from sticking.
  5. Sprinkle the Cream of Tartar onto your work surface and knead into the fondant.
  6. Once all the ingredients have been incorporated give the mixture another good knead and triple wrap in plastic wrap and put inside an airtight container until you are ready to use it
  7. This paste is best left to rest overnight before use and will keep for months if stored correctly.

Can anyone tell me what copha and crisco are please, I've never heard of them in the UK.

I made some figurines last year and they were fine when I made them but don't think I stored them properly and the week later when they went on the cake they kept falling apart and had to be constantly glued together :) with icing sugar!

Im also from the uk lourogerson i think it could be lard not sure if you find out what it is could you let me no please

Crisco is known here as vegetable fat. The brand I use is Trex and is widely available in supermarkets. Hope this helps.

I'm also from the UK and TREX is what's known as CRISCO here. It's 'NOT' lard but vegetable fat/shortening. You can find it in any supermarket Tesco, Asda, sainsburys etc all do it. I've made this recipe several times, it's a very good recipe and works fantastically.
