Chunky Strawberry Filling

Needed a yummy strawberry filling that wasn’t buttercream. Looked at many recipes and came up with this.

Chunky Strawberry Filling

Ingredients

  • 1 lb frozen whole strawberries
  • 1/2 cup sugar
  • 3 Tablespoons corn starch

Instructions

  1. Unthaw frozen strawberries and keep liquid. Place strawberries with liquid in saucepan and using kitchen scissors cut into small chunks. Mix sugar and corn starch together. Add mixture to chunky strawberries and mix together. Heat until bubbling-stirring constantly. Boil about two minutes. Cool and fill cake.

it seems delicious and easy. Do you know how much time will it last in the filled cake at room temperature? I´m looking for a filling for my niece birthday cake but the want it to stay in the table as decor.

Can this filling be used in a cake I plan to torte, fill, crumb coat and then freeze until closer to the event it is needed for? It sounds delicious.

I just tried this in a wedding cake and let me tell you I LOVE IT! So did everyone at the wedding. I do not see why this can not be frozen. In or out of a cake. Thank you so much for this recipe.

As others have inquired, does the cake need to be refrigerated after filled? How long can the cake be left at room temp with this filling?

Since it is similar to jam, it would be fine to sit out for a party and while you decorate it. I would refrigerate after decorating and again after a party, but it would be fine to leave out during a party.

I made this as a cake filling for a white cake w/almond flavoring. It was a trial wedding cake for us. It was delicious!!!! It was like eating strawberry shortcake :-) This will definitely be the choice for the base tier's filling. The recipe made enuf to fill a 10inch cake and I used a dam.

This is a great recipe. The only thing I did different was drained the strawberries and then followed the recipe. I also doubled the recipe. The reason I drained the berries I wanted to use the juice in the strawberry cake recipe I made. It was great and I will use this in the wedding cake I'm making in May.
