Making/storing Mmf? Rbc?

I just got my KA mixer today and I am going to try to make MMF. Can it be stored for a few days or longer? And if so, how? in the fridge, on the counter, air tight?

Also, the same question for rolled BC.

not too sure about the RBC... but as for MMF, keep it on the counter or in a cupboard, completely airtight (i.e. wrap it in plastic wrap and then put it in a tupperware container). It's good for months like that. you may have to re-knead it and zap it in the microwave for a couple of seconds to soften it up...

The rolled buttercream seems to be best a couple days after making it. I would store it in an air tight container in the fridge. I would take it out a few hours before using it so it can soften up some. I'm not exactly how long it lasts in the fridge. Maybe someone else can answer that.

Be very careful when doing MMF in your KA as it may "burn out" the motor. I usually just do mine by hand. I think there is a tutorial on here somewhere. Just wanted to let you know.

I usually store my RBC on the counter in an airtight container. It's just fine and you won't have to wait for it to soften. thumbs_up.gif

I've never used RBC, but MMF will keep in the fridge for about a month, wrapped tightly in Saran wrap. Be sure to either soften in the microwave or leave it out overnight before you use it, though.

Also, I use my KA to make MMF and it's fine...just be sure to use the dough hook, and you may have to hand-knead the last bit of powdered sugar.

I also just keep my RBC in an airtight container on the cabinet. It keeps a long while and still tastes great!

I've read here on another post that you can store your MMF in an airtight container wrapped up in the pantry or what not for as long as you would w/ regular marshmellows. They have an expiration date on them, so that's what you would go on. I've never tried RBC yet so can't help w/ that. I have a vac sac machine and I seal up my MMF and keep it the pantry and it last for awhile. HTH. =)
