Just wanted to share another use I have found for my Agbay. I use it to level my icing! After I ice the cake I use it to score a line that is the same height all the way around the cake and then use my offset spatula to level it out. I learned this trick from Sugarshacks Buttercream DVD, except I use my Agbay and she does it differently. Her DVD has definitley helped me improve! I asked her if it was OK to post this picture. She is so awesome!
ok call me stupid, but I am not following this at all....can you break it down to pebble level for me hehehe
Madge:
I want the top of my cake to be level and even all the way around. So I score a line around it. I then drag my spatula across the cake at that line to pull off the excess icing, turning the cake as necessary. That way the cake is even and level and my top edge is nice and crisp. Im still trying to perfect the technique, but since Ive been doing it this way, my cakes are a lot cleaner.
