How long can a cake sit out after being covered in fondant and decorated before being eaten?

I am a bridesmaid in a wedding this weekend, and I am also providing the wedding cake. I want to be able to bake and decorate all the cakes wednesday and thursday night for the wedding on saturday, but I am afraid by saturday evening the cakes will no longer be good!

I can put them in the fridge, but I dont like when the fondant becomes sticky when I take them out.

I like to bake my cakes 4-7 days before the event and freeze them. Then i take out 2-3 days before to decorate (depending on the design and how much time it will take) As long as you don't have any perishable fillings or icing then they don't have to go into the fridge. If you decorate on Thursday you should have no issues with it sitting out.

What about a cake in the fridge? How long can it last before it needs to be eaten? I already baked all the cakes and they are in the freezer. I have 2 sheet cakes to make and ice with buttercream. I would like to get started decorating those tonight, BUT I know it is too early for that. Maybe tomorrow and keep them in the fridge till saturday?

It's not too early... of course, tomorrow would be better than tonight, but your refrigerator could dry out the cake. Once the cakes are iced, the BC prevents the air from drying out the cake. Leftover cake can start to grow mold in about 2 weeks, so 3-4 days is nothing. (I think cake tastes best and more moist between days 2-4.)
