Hi all! I'm a newbie here as well as a newbie to cake decorating. I discovered while searching for a cake idea for my 3 year old bday party and decided to make it myself! I went BIG and intimidating for my first fondant and gumpaste figure cake and it turned out decent, not beautiful but my friends were impressed and most importantly when my little boy saw it his face was priceless, he was literally speechless, so that made it perfect!
Anyway, I've done a total of four cakes so far. My homemade MMF has gotten better each time. UNTIL YESTERDAY! I prepared the cake the night before, crumb coated it and stuck it in the fridge. I pulled it out the next morning around 8 to let it warm up to room temp a bit while I rolled out the fondant I had also prepared the night before. I had made 2 batches of white MMF and mixed them together for a rather large cake. I was kneading it and kept getting little holes, or divot like spots and it was not "stretchy" at all, it was more like gumpaste but not smooth. So I added shortening, thinking it was dry. NOTHING. Added more shortening, NOTHING. My hubby suggessted adding powdered sugar so being desperate I did. NOTHING. As soon as I would roll it out, try to pick it up it literally tore, like old bubble gum. It was the most humid day of the year so far here in the south but the AC was blasting. I was an hour late for the party already so I slapped some more buttercream on it and called it a day. Funny thing was all my friends/coworkers at the party said it was the best tasting cake I'd made so far. ANY pointers or ideas on what went wrong for a newbie???

If the air was blasting, it may have been to cold. Is there a vent blowing right on the surface you were using to roll it out?

I would try turning the air off while you roll it out. Also you can microwave it for like 5 - 10 seconds then knead and roll out.

I need assistance on fixing fondant. I made a rather large batch of MMF and it's sticky and soft. I tried using the MMF to make cars for a project I had and the fondant was way soft, any suggestions? Do I add more powder sugar? Any help would be greatly appreciated.

Crism-maybe try kneading in a little glycerine. Your fondant may have been a little dry.

YES there is an AC vent directly over the table where I was rolling the fondant. I will close it next time to see if that helps!! And really dumb question but I have glucose that I used in another recipe, will it work instead of glycerine or are they one in the same? Thanks for the feedback!

i used to use mmf. until i just discovered michelle fosters fondant (mff) ohmygosh! YAY! everycake i have ever done in fondant before mff has conjured up thoughts in my mind that involved smasing them on the wall then stopping up and down in what ever is left of it.

not today! no no! i just completed my first perfectly fondant covered cake EVER!!! did have to "patch up" wrinkles or hoels or anything. i am so proud. lol. i was getting stressed that i may have had to take a class or something... lol. so, if i complete ditz like me can manage to cover it perfect with fondant, imagine what you could do. =)

its so easy to make as well! a few more steps than mmf, but nothing major.. i have to make my corn syrup from scratch as well.., but it is sooooooo worth it!! ;D

(can you guess im on the worlds biggest caking high right now?? hahahahah)

MomMiller: sometimes I think a little moral support goes ALOT further than anything else so thankyou! I needed that!! You know wat southern humidity is like! These past few days down here in Ga have been horrible!!
Noahsmummy: funny you mention smashing the cake on a wall....I threatned to throw this one out the window while my husband was doing 70 on the interstate but my friend was on my cell telling me she would kill me if I didn't bring dessert! Another friend was mad this morning cause I had no leftover cake so I promised to make her another small one but I'm gonna try the MFF you suggested. Does it taste as good? I'm afraid all my friends at work are gonna get sick of cake or worse they are all gonna gain 15 pounds and hate me!!

lol, i am shocked none of my cakes have ended up on the wall. the worst one was my sister tt cake. holy crap. i was in tears. mum had to talk me through that one or i would have chucked it at the fan than was meant to be keeping it cool and watched it splatter the kitchen. lol

as for mff taste. im not big on sweets, so i personally havnt tasted it.. i dont eat fondant.. weird hey? dont really even eat cake actually.. haha.

buuut. mff smells divine. it doesnt have that sickly sweet overpowering smell. i think the cream and the butter take some of that away. id like to have a mff airfreshener if i could...lol
