I need a recipe for a European Sponge Cake. I know someone that loves them but says it is hard to find a good one. I guess they have a pudding filling in the cake - or atleast the one this person usually gets does. I googled it and got a ton of hits, but if someone has a tried and true recipe I would rather try that one.

European sponge cakes tend to be drier than American sponge cake recipes. Are you going to use a sugar wash or depend on the pudding filling to make it more moist.

Here's a highly rated traditional Genoise sponge cake recipe:
(Note some of the negative ratings were because the cake was dry. But that's because the recipe doesn't advise the sugar wash which is also traditional with this type of recipe.)
