On Saturday I was baking cakes and had some batter left that I did not need. Because there was not time to do anything with it I put it in the fridge. Tonight I remember that it is in there, if I bake it up tonight (Tuesday) is it still safe to eat?

I'm a foodservice manager in a healthcare facility. USDA guidelines give us 3 days from the prep date - so today (Tue) is the last day you can bake it off. Don't know if it will rise, but it's worth a shot so you don't waste the batter. I'm all about the food cost!
Not that it won't be safe...but I am not sure the texture will be right. If it was in the fridge...you might give it a go. See what happens!
Cake batter can be refrigerated for several days. If not needed for a longer period, freezing the batter is recommended.

I did go ahead and bake the cake up and it did fine actually. It rose just fine and was quite tasty.

Oh, I'm so glad to hear it came out okay. I've always wondered that myself and have never tried it before. I asked a friend once and she just told me it wouldn't work. Huh, looks like I'll be trying that soon!
I too was curious about storing leftover batter in the fridge. I have never tried it, I've always bake it all up. There is always time for just one more....heehee.
