CCCC #15
Join in for the next round of the cupcake club. If you are new don't worry. I just joined on #14 and it was fun. Here is the link to the original if you are new or just need to remember the rules.

I found the recipe for the cupcakes when I was searching for recipes that felt like fall. I can't remember which website I found it on. icon_redface.gif
A friend of mine gave me the frosting recipe. I haven't tried either recipe myself yet but I thought they sounded good and would work well together.
I hope you like them.

How about if we try to finish by November 15th?

Apple Spice Cupcakes
2 cups all purpose flour
1 tsp baking soda
3/4 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp ground cloves
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup granulated sugar
1/2 cup lightly packed light brown sugar
4 large eggs, at room temperature
1 1/2 cups unsweetened apple sauce

Preheat oven to 350ºF. Line muffin tins (mini or otherwise) with paper liners.

In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
In the bowl of an electric mixer fitted with a whisk attachment, cream butter and sugar on medium speed until light and fluffy. Add eggs, one at a time, scraping down the sides of the bowl as needed. On a low speed, add applesauce and then the flour mixture, beating until just combined.
Fill each cup 3/4 full with batter. Bake 10-15 minutes for mini cupcakes, or 20 minutes for regular cupcakes.

Maple Brown Sugar Frosting
4 oz cream cheese
2 c. powdered sugar
1/4 c. brown sugar
1/4 c. maple syrup
Combine all ingredients and beat until desired frosting consistency.

I agree 100% that the house smelled amazing while they were baking.

Even better news is the cake is fabulous! IMHO, its moist and tastey, not too overpowering, but you can recognize the spices used.

On the flip side, I definitely dislike the frosting. Its grainy and waaaaaaay too sweet. Its also too loose for my personal taste. It could even be described as a glaze and that might be a bit more accurate because of its consistency.

I could see it easily paired with a cream cheese frosting with a hint of maple.

Im going to post a pic, I also have step by step pics that i'll add to my blog that I took while I was baking. Maybe tonight, maybe tomorrow.


I cant wait to see how my fellow CC'ers like or dislike the recipe.

Made the frosting and found the same as JessDesserts. Very grainy, overly sweet, and not really my cup of tea. Made cream cheese icing for the carrot cupcakes and used some of the extra with the same spice in it to frost them. Very good. DH liked them plain. I will make some with a strussel nut topping for church in the morning.

I liked that they are fragrant and stand well on their own. The icing is not anything I would like to use. Maybe NOT adding the brown sugar would be a fair better icing. I did melt some to make a glaze and did like that much better.

I made the cupcakes last night for a party today. The house still smells good. I thought the cupcakes were moist and I really liked the taste but I was wishing for more apple flavor. I used a store bought applesauce that was smooth. I think next time I will pulse some apples in the food processor until they are a little saucey but still have some small chunks and use instead of the store bought applesauce.

I just made the frosting and I agree with jlynnw and Jess are saying - grainy and running and not very good. I made some cream cheese frosting to use instead. I don't have any suggestions to make it better - I think it should just be one of those recipes best forgotten.

jlynnw - the streusel topping sounds yummy. Would you put this in them before baking or on top instead of frosting after baking?

I have to go... I am decorating the cupcakes now for a birthday party with a Halloween theme.

I did the strussell topping before baking. I also added a 2 minced fiji apples (peeled, cored and finely diced/minced) to the apples. I then added the topping a d baked. I used the cream cheese icing that i melted in the microwave for a glaze and drizzled on top.

I did prefer the added apple for flavor.

I liked the strussel topping as well as a cream cheese icing dusted with spice to finish the cupcakes in place of the original icing.

Overall, loved the cupcake recipe but would not recommend the icing.

I made the cupcakes and added a streusel topping before baking. Due to the reviews of the icing, I decided not to attempt the icing - sorry. These cuppies are excellent with the streusel topping. I will make these again, but I will add chunks of real apple the next time for some additional texture. Thank you for the addition of this cupcake to my arsenal!

jlynw - I made the cupcakes again with the streusel and the apple chunks. There were a big hit. Most people liked the orignal but they loved the updated version. Thanks for the ideas!
I topped them with a regular cream cheese frosting because I didn't like the original frosting at all.

I hate to be the one to spoil the Party here but we did not care for these at all..
I made the cupcake just as posted and it was just OK at best ...Would NOT be a keeper recipe for me!
I made my favorite cinnamon cream cheese buttercream instead of the icing with the recipe because it sounds like nobody cared for the icing at all.
