This was my cake for Course 3, Lesson 1.  I just wanted to have a little fun and exaggerate some of the techniques that we learned.  For instance, I piped the "delicate" cornelli lace with a 5 tip.  This cake is 3 six inch layers.  I used the canned Wilton chocolate icing and homemade buttercream for the piping.  I really enjoyed this cake.  I wish I could perfect bow making.  It was much easier to make them on a flat table top in class instead of on the side of a cake.  I will be working on that.  Thanks!

This is a layered eight" chocolate cake with old fashioned chocolate buttercream frosting covered with fondant. The Faerie is based on Cicely Mary Barker's Shirley-Poppy Faerie. A first time for full Australian stringwork and bas relief. Thank you for looking.

A replica of the original wedding cake, the picture was black and white, so we had to rely on the newspaper article as to the color of roses.  All buttercream with royal icing drop strings.  I haven't done drop strings for quite some time, so that was a challenge!  Sorry I don't have a picture with the cake top, but it really looked great with it.

This cake is supposed to be made in all fondant but because the people I was making it for didn't like it I made it with BC.  I think fondant is the best way to go and probably a lot easier that doing it in BC.

Simple decoration with ruffle swags and drop strings. All of the flowers are real and were placed by the florist, so I can't take credit for that part. The mother of the bride called me after the reception almost in tears over how beautiful it turned out. Always nice to hear things like that from customers.

It's a dummy iced in royal with royal icing petunias.  The base was also iced in royal then combed and a reverse shell border added to finish it off..  This is to represent some of the techniques learned up to and in Course III...petunias, outlining, reverse shell, drop strings, fondant beads, rosettes, leaves, stacked tiers as well as using the separator plates and pillar construction.  Wedding season is fast approaching and wanted to do something really nice for the craft store window BEFORE it hits.

6 and 9 petal dummies on a 16" board covered with pink fondant then brush painted with superpearl.  Gumpaste floating collar.  Bridges piped with a Zero tip and brushed with thinned royal.  peak- a-boo blossoms.  Strings piped with a 0 tip.  Cascading blossoms punched, and edges thinned. scroll work and snail trails piped with zero tip with royal.  First attempt at String work!

6, 9, 12" round and petal dummies on a 18" petal board.  All covered with wilton white fondant and then brush painted with super pearl.   Gum paste stylized peony topper (droopy now b/c of the rain ;(  )  Scroll work piped with 0 tip.  Bridges hand piped and then brushed with thinned royal.  peek -a - boo blossoms.  Strings piped with 0 tip.  Middle tier brush embroidery, then hand colored also has 3d blossoms.   Bottom has lambeth cushions encircled with blossoms.  Some blossoms have boiled sugar stamens.

This was for my MIL, butter rum cake with butter rum buttercream-oh my sooooo good! I also posted a video on youtube for how to do the drop strings :)

This was for a 50th anniversary but I thought it should go in the wedding section. The cake was a replica of their original wedding cake. I made a few changes with medium but that is it. They started crying when they saw it! They just loved it!

The picture is taken from a generous angle. 10, 8, 6" square cakes.  From this angle cake looked awesome.  MMF, MMF red polka dots (I made myself!!) and royal icing string work.  One corner in the back sloped way down.... I had put the whole thing on my silver cake stand, only to realize I needed the cake stand for a wedding I was doing and had to MOVE the thing onto a white wilton 16" cake plate.... And the 16" plate BOWED! So the whole cake buckled on the bottom from moving it and the bowing of the plate.

Guitar cake for a boy turning 18 who loves music.  My hat's off to all who do 3D cakes-this about did me in and it's an easy one!  Chocolate cake, mocha mousse, white chocolate BC.  All decorations are fondant and thanks to all who have posted acoustic guitars.  Your pictures helped immensly!

The Loser for throw down between myself & Couturiere. Had to be totally edible and the theme was Ribbons & Lace. Two-tiered pound cake covered in white fondant with pink gumpaste carnations, yellow, pink/lilac colored roses, white plunger flowers, pulled lilac flowers, & yellow fantasy filler flowers, along with rose leaves, ferns & gumpaste ribbons. Fondant ribbon inserts with bows, RI lace butterflies & lace points on extension work with "poor man's" lace on the bottom to finish. Critique Subgroup Mbr.

4 tier square, all BC, bad photo (I know ... the lighting in the room was bad!), but it's iced in light pink, with white stringwork with silver dragees.  Bride saw a similar cake in a magz and we used that for inspiration.

From the class I took from Geraldine Randlesome.  This is an 8" dummy.  The fondant got a little messed up during the flight to Las Vegas, but I think it looks very pretty, if I do say so myself.  She was an amazing teacher!

A 7" dummy covered in fondant from Geraldine Randlesome's Basic Australian class taken in Las Vegas at Cake Camp.  Much of the work is from what I learned in that class as well as her Oriental String Work class and also from Kathy Scott's Commercial Australian class.  I sort of combined many of the techniques I picked up from each class and practiced them on this dummy.  Thought I'd share what I've done so far.

Large sheet cake cut to look like birthday boys guitar.  I covered it in fondand.  I used styrofoam for under the neck and jewelry string for the strings-nothing else I tried was working.
