This is the cake I made for a friend for her birthday. It is a 4 layer, 6" round, gluten-free vanilla cake with cream cheese icing and a gum paste Stargazer Lily (her favorite flower.) I went with a rough-iced look that I've been seeing done on cakes. I also made the gum paste flower. It was my first ever gum paste flower to make and I was so happy with it and she got to keep it. :)

I was in charge of our Christmas Party this year and I work with atmospheric/weather scientists. I thought they would appreciate penguins on an "iceberg." It was a big hit. I have Celiac disease, so I don't keep regular flour in my house -- they ate my gluten free cake and raved about it for two days. This is the third shaped cake I've made so far.

This was my first Gluten and Dairy free cake that I have ever made and I was pleased with the result flavor. (I was horrified it would taste like cardboard) It is a carrot cake that is topped with a vanilla bean frosting that I made. As decoration, I used home made fondant roses. :)

This cake was a nightmare from start to finish. My friend's 6 year old daughter is diabetic and the request was for a sugar free Hello Kitty cake. The cream cheese was not creamy enough and there were lumps everywhere. The pudding was yellow instead of white or cream. The sugar free candy letters were too heavy for the icing and slid down. The only upside was that they couldn't believe this was a sugar free cake. They said it was delicious.

A gluten-free 3-tiered cake made for a yoga studio staff party. Went for a plaster-look rough cream cheese icing and filling on a vanilla chai tea cake. With stargazer lilies, plumeria and moth orchids. Made the gum paste flowers "freehand" with no cutters or veiners, teaching myself to make them through trial and error and looking at photos of the real flowers. I am so happy with how they all came out.

For a little girl who only had one birthday wish: to be able to eat cake! Because of severe allergies, she wasn't able to have any cake before. This cake was one of the most grateful ones ever to make. Free of dairy protein, lactose, soy, eggs, peanuts, tree nuts, and much more! Fondant is home made marshmallow fondant. The fun part is, everyone loved the cake and couldn't believe what was not in there! I am just thrilled to have made this little girl so happy. TFL

This is a toolbox (sort of) made from gluten-free brownies iced with buttercream. I had trouble with the icing consistency, as well as with getting the corners and edges straight. The tools are made of chocolate. The small yellow toolbox is also a brownie cake with chocolate tools, but it's a miniature one.

I was short on time and had to do something fast, so this is what I came up with. It was for my daughter's friend-invited b-day party. Lucky girl gets two sets of cupcakes and a cake for the day of her birthday. LoL Yeah...I guess I'm happy for an excuse to cake. =)
Yellow cake, Chocolate icing, Dairy-free Michele Foster's Fondant, peppermint pearls
