Idea from Dede Wilson. This is her Tropical Passion Coconut Cake with Macadamias. I used flaked coconut instead of the sweetened shredded coconut like normal. It was beautiful, but I really prefer the regular coconut. Any suggestions would be greatly appreciated.

Cake is a combination of several ideas from cakes on CC. 10" and 8" red velvet iced in buttercream. Tiki hut is two cupcakes stacked, iced in royal and covered with pretzel sticks. Pretzel rod palm trees with fondant leaves. Torches are candles wrapped in fondant (didn't really like the way these turned out). Fondant tiki mask, shark fin, snake and coconuts. Pirouette cookies around island. Graham cracker crumbs for sand and Oreo crumbs for path. A lot of work but fun and very rewarding!

Lighthouse-on-land-with-beach cake for my mother's 50th birthday. Included functioning light. Lighthouse, Barbie, classic car and, yes, Star Trek classic Enterprise, all theme elements for my Mom's interests. Enjoy!

BTW This is only my second production cake ever! (I'm going to stop counting the very first cake as it was just to see if I could make a cake at all!)

I did this cake over a year ago for a friend and I forgot to take a picture of it. Luckily my friend did not forget and sent the picture to me. It is supposed to a coconut drink like you get at a resort. I baked the cake in a pampered chef batter bowl and frosted.

Made this cake for a family dinner. I call it my almond joy cake. Coconut cream cake torted and filled with chocolate ganache and almond slivers. iced in cocnut cream cream cheese icing and then in ganache. Toped with tosted cocnut and whole almonds. Tast great everyone loved it.

I have a lady that orders this cake at least 2 times a month, this one happens to be for a funeral. , it was torted to make 4 nice tall layers with the filling as thick as the layers. 8 inch with a smooth silky coconut seven minute frosting topped with lushish coconut :) Thank you for looking.

this cake was for my husband's 40th birthday. i hate that i couldn't get a decent picture, but that's what happens with little ones, they need you at the craziest times, so i picture was taken by someone else & i had to make the most of it.

This was for a dear friends mom's wake. It's a 2 layer coconut cream cake with a fresh coconut icing that consists of a sour cream/whipped cream base. As you can tell it doesn't smooth well because of the coconut and because it melts rather quickly, but after sitting in the fridge on the cake it gets more stabilized. Delcious cake...just doesn't always look the best :D)

Boy did I mess up on this one! Somehow, the icing was too perhaps, the icing was filled with crumbs, so I had to make up for it by wrapping ribbon around the sides and sprinkling coconut on top. It was an unexpected cake for the birthday girl, so she was happy to have it and everyone seemed impressed anyhow. I hate how the flowers in the middle are off center. . . .

Coconut cake with lime curd/BC icing. Decorations are MMF with 2 tablespoons of lime juice added (yummy). Added a single drop of liquid green food coloring to piping gel to make all the juicy parts.

Palm Tree is Chocolate Fudge Cake with Chocolate Icing. Coconuts are Coconut Cake with Chocolate Icing. Topped off with MMF. A bit of green luster dust was used on the Palms. This was for friend who was having a Cruise Bon Voyage Party!
