My friend passed her T.C.R.G.s (3 day certification exam to become an Irish step dancing teacher) on her first try! I threw together a little celebration to celebrate her accomplishment. I made cookies that look like each of the solo and class dresses she wore through her years of competition.

3D oversized (14") basketball cake made of dark and white chocolate mud cake, dark and white ganache and basketball-coloured textured fondant. Celtics coloured fondant board. Hand-cut black gumpaste lettering. Thanks for looking!

Inspired by GingerHappyCakes claddagh cake. Modeled out of hand with gum paste. Flowers and celtic knot also gum paste. I used a lollipop stick to hold up the claddagh.

Wedding cake consists of 2 x 14 inch heart shaped cakes, and 1 x 9 inch heart shaped cake. The small cake is a fruit cake (that the bride's grandmother had lovingly baked), and the other two are a chocolate mud cake with milk chocolate ganache, and a white chocolate mud cake with raspberries, which had white chocolate ganache. The bride's bouquet consisted of Dutch irises, white lilies, cream rosebuds, purple lisianthus and forget-me-nots, so I made sugar flowers to match. The bride and groom requested a Celtic knotted heart for the fruit cake, so that was made out of gumpaste, they also asked for a Celtic knotted plait around the sides of all the cakes. I stencilled it on with royal icing, from a stencil I purposely made for me to do this specific pattern. This is the second wedding cake that I have made, and I'm pleased to say the happy couple were ecstatic with it!!

Carrot cake with Cream Cheese Buttercream icing. Fondant borders. Fish is cereal treat covered with fondant and hand painted. Cutting board is hand painted fondant covering foam board (that would have been a LOT of fondant). Gumpaste filet knife and clip. The groom has Irish roots so we tried to give the cake a Celtic feel.
