Well, I just completed Course II last Thursday, and this is my finale cake. My basketweave design sucks because I did it ahead of class time (with no practice, might I add) because I had to leave class early and knew I wouldn't have time to finish it during class AND add the flowers. Also, I had complete disaster with my Royal Icing flowers: the first batch got destroyed when the box popped open, and spilled them everywhere, causing them to break and crack and the second batch just didn't harden up!

This was my mom's Mother's Day cake.  I'm happy with it except that I still need a LOT of work on my writing.  Flowers are royal icing.

After all the posts about caramel from boiling a can of SC Milk I had to try it.  This is a butter pecan cake with caramel filling & chocolate SMBC icing.  It was soooo yummy!!!

Just another basketweave that my friends and family seem to love.  Buttermilk pound cake w/whipped cream buttercream filling and icing.  Royal icing flowers and a few MMF Roses.

Made for my for MIL's B'day May 2006.  First attempt; came out pretty well.  Next time will use denser cake.  Royal icing flowers, buttercream icing, chocolate doctored cake, fondant accents.  Sports ball pan for pot, mini ball for cups.  Thanks for looking and offering suggestions!

This is a small birthday cake I made for my Grandmother's birthday.  It is vanilla sponge cake with lemon cream cheese filling and vanilla buttercream.  The flowers and bird cage are royal icing. The birds and gift tag are fondant.

The cake was done for the British Consulate General in Hamburg/Germany, for their official " 80th Birthday Party for Queen ElisabethII". All 6 Tiers are rich-fruit-cake. Everything ist covered with fondant. Flowers and emblems are made from gum-paste. The flowers are the symbols for the 4 countrys of Great Britain. The Lion and the unicorn are from the coats of Arms of Elisabeth II.

16", 12" and 8" layers; two bottoms layers are stacked.  Top layer is tiered on top.  This cake is based on the old Wilton Course III Final Cake with some variations.  With did a shell/ruffle border under the hearts and on all three layers.  We opted not to do any drop string borders as the cake had to travel so we did the ball borders down the sides and added the clusters of flowers to match the flowers on the hearts.  The bride's sister provided the cake top.

DH White cake with strawberry filling. Made for my sister's co-worker's birthday.
I tried something different with this one.  Strawberry filling was sandwiched between icing layers in the middle.  Kept the filling from seeping into the cake.
I was told she tried to put off cutting it for as long as possible, cause she just didn't want to cut it.  She even ran out to get a camera to get a pic before it was cut. :P

We had a combo birthday/graduation party for work.  I used white cake, raspberry filling, and IMBC.  I left there with a swelled head.  Everyone had such nice things to say.  The yellow flowers are royal icing, the roses are IMBC.

This is a white cake with vanilla pudding.  I used royal icing for the dam.  The flowers are made of gum paste with royal frosting center.  THe cake is covered with cream cheese frosting and mm fondant.  I used yellow fondant to make circles around the cake.  I modeled it after "yellow circles" on brides magazine website.  This is a 6in and a 4in cake.  I made it just for fun... Trying to figure out who to give it to :)

this little booger was so hard to do! it was the only dancer because her arms and legs kept falling off before i could even lift the cutter up! i even tried flour. so much for making 30 of these for my dance team! oh well...better luck next time!

This is the final cake for Wilton cake class course 2.  I did a lid cut it out of cardboard and then put the basketweave on top of that.  All the flowers are royal icing.

What a pain in the keister this cake was.  I used the whimsical bakehouse house buttercream, which waaaay too soft.  It also doesn't crust, and I just couldn't get the icing smooth for anything.  My star cornelli and flowers are off kilter.  It's a white cake torted into 4 layers with raspberry filling, every other layer is white or blue.  The party I'm making it for has been cancelled, so I guess DH gets to bring it to work.  I need a new icing recipe!

I made this cake for one of my girlfriend's baby shower.  The color scheme was lavendar and green, but the theme was garden party.  The baby was gumpaste.  The flowers and butterflies were royal icing.

I deliberately collared the cake pans in order to obtain more height for each layer.  The cake is frosted in buttercream.  The flowers are all royal icing.  Additionally, I added buttercream dots on the sides of the cake.  The cake was actually my final project for a cake class I took in May 2006.

This was my first wedding cake and my first stacked cake, I was really nervous but I think it turned out okay.  It was for a wedding, this past winter.  All of the layers were 4 layers each(2 cakes torted) and they were all different flavours.  The top layer was chocolate(the Bride's favourite), the next was spice, the next one was chocolate and vanilla alternated, and the one after that that was vanilla and the last one was chocolate, again.  All of the snowflakes were handmade out of Royal icing.

I made this cake for a small luncheon wedding. White cake, buttercream icing with royal roses. The M on top is white chocolate. After taking the photo there were a few things I had to fix - photos don't lie!

Iced with French Buttercream Icing and all the flowers I made of Royal Icing.  The Bride chose a clear topper that had daisies and the words, "He loves me... She loves me...

This cake was buttercream icing with royal icing flowers.  I did a chinese theme - the thought was to replicate a chinese painting with a plum blossom tree and the word for "spring" on the right.  I think I put a few too many "plum blossoms" (actually different coloured forget-me-nots) on the tree because it looks a little cluttered.  Next time, I'll space it out a bit more.  The next picture is the side view.

This wedding cake(royal over styrofoam) w/royal accented fondant bow is a duplicate of the one I created for Wilton Master Course class final.  I was thrilled to no end to find it on the front cover of the 2006 course Wilton course catalog!

So here's my cake all finished. Some of you were very helpful in helping me out with this cake, so I say thank you. I made this just to practice my fondant and was tired of the cake I used to have. It was a lot of fun...my hands hurt from piping royal icing, but it wasn't too bad :)  Entire thing has pearl dust on it, and pearls are hand rolled fondant.

Made this at work this past weekend. It's cheesecake covered in fondant. I have a before flowers pic and after, I don't like it much with the flowers...not favorite florals.  Anyway...the decorations are all royal icing with pearl dust on top.
