This was a sour cream coconut cake with 7 min frosting. I was worried about the 7 min frosting holding up to the coloring but it did pretty good.

Classic Easter Bunny Cake. Took 2 rounds, used one for the face and the other cut the 2 ears with the remaining centre used for the bow tie. Cover the cake in 7 minute icing and then sprinkled it with coconut to give it the 'furry' look. Tinted coconut, licorice whips and jelly beans complete the face.

accually it was made for my mother's in law birthday... But I wanted to make something spetial for her since she is so nice - so I made her this cake. bottom tier is coffe and wallnut/almond cake with coffe buttercream, second tier is coconut poundcake with coconut filling (she loves coconut) and top tier is yellow sponge cake with fruit and cream cheese filling my second wedding cake trial, I see mistakes allover it but she liked it a lot and that counts, right?;)

I am a member of the MacDowell music group here in Utah - I was in charge of the refreshments this month, so I made some cakes that I have been excited to try.... 10" dark chocolate with chocolate icing and chocolate sauce 8" coconut pineapple cake with white choc cream cheese icing (kudos to cindy6250 - this cake was yummy!) 6" pirouette cake - yellow cake with chocolate frosting and chocolate sauce o the top

My sister turned 42 over the weekend and I brought a cake for her to our family easter party. She never likes things to be too showy, so just a simple cake. (but soooo yummy) Coconut pineapple cake with white chocolate cream cheese icing. I used the icing to write happy birthday, and writing on the pinapple filling turned out to be a little harder than I thought it would be...LOL Thanks to cindy6250 for sharing this recipe!!

This is a cake I made using a 3D mold. I covered it w/buttercream (should have used non-crusting) and then put superfine organic unsweetened coconut on top of that. I had the problem of the bunny's head trying to fall off. I secured it w/dowels. Any ideas on how to keep it's head from falling off next time?

Here is a Coconut Poppy Seed Layer Cake that was ordered for a going away party. The frosting is called White Chocolate Cream which is very light and delicious. It also has fresh sliced strawberries between the layers.

This cake is white cake with Coconut Cream frosting and Mango Dessert BC. The fondant is Coconut flavored and made with Toba's recipe. Thanks to everyone for the help and encouragement on this. Some of the mango strips are fondant covered strips and then I gave up on that idea and just cut the fondant into STRIPS! This cake is made to look like my DH's favorite Thai food.

My daughter is having a sweet sixteen party in June. I plan to make the cakes for the party. Here is an example of one of them. It is a coconut flavored cake with pineapple, coconut, and macadamia nut filling. I've served it today at a school luncheon. They said it tasted great and looked like it was decorated at a bakery. That was a compliment!

This was made for my cousin's 2nd birthday. His party was a farm theme, so I made this cake to go along with that. It's an 11x15 cut to shape and iced in red buttercream. The roof lining and silo roof are done in white buttercream. After it crusted I used the spatula to make the lines down the cake resembling boards. The doors are crackers lined with pretzles. Grass is made from tinted coconut and the hay is shoestring potato sticks. Of course the animals are graham crackers. :-)

Six inch round, 7 inches tall coconut pecan cake with a seven minute icing. The fun part was the little bird, I didn't think I could do it but...done in fondant airbrushed 2 weeks ago, scratched up my kids and just painted the beaks and eyes..kids helped a lot with this little bird and I love the rustic look of it. But my roses STINK so let's not call them roses LOL.

This is the cake that I worried about for the past 4 months. I wanted it to be special for my little girl's sweet sixteen luau. The bottom tier was a 10-inch white cake with raspberry filling. The middle tier was an 8-inch white cake with pineapple, coconut, and macadamia nut filling. The final tier was a 6-inch white cake with strawberry filling. All the layers were covered in turquoise colored buttercream and covered in white chocolate shells, sea stars, and coral. Thanks for looking!

Coconut Muffins pasted with strawberry jam and rolled in coconut flakes. I also filled the middle of the muffin with strawberry jam. Oh so goooood!
