I took a class in Toronto over the last few weeks and this was our final project. The dummy cake is covered in fondant and then all the detail is done with royal icing. I am not happy with the topper but that was part of the class.

I wanted to do a fall theme on my course III cake and so I went with the leaves. Something I had seen on the website.

This is my very first try at decorating a cake. It was a 10" x 3" cake and I torted it into 4 layers with a pineapple/buttercream filling.

We learned how to make Fleur de Lis, stars and a couple of different trims that I can't remember the name of.

I am really enjoying the classes and the teacher, Laura, is a member of this forum.

I made this for my Wilton III class. I wonder why the Wilton classes include so many scary clown cakes.

This was the first time I used fondant. The instructor let us use MMF. It was the first time I made it and worked with it. We were in such a hurry to finish the cake that I had cornstarch all over everything. Some of the other ladies in the class used Wilton fondant. I did notice that the Wilton fondant with the gum tex dried faster and harder than the MMF with gum tex.

This is the oval with all of the royal flowers on it. It was a really fun class and I highly recommend that you take it no matter what your skill level is. I picked up so many pointers!!!

This is my first cake from course I. The infamous rainbow cake. I had a lot of fun learning the piping gel transfer. I really need to work on my icing though.

This was the cake I made for my last cake in class 3 ! I will miss my classes very much. Our last class was on Oct 30th, so I tried to do something that had Halloween spirit! Thanks to several fellow ccers for their inspiration!

My husband was among a group of citizens in our community to complete a recent homeland security volunteer training program. I made this cake as a last minute request for their graduation ceremony. The design in the center is our city's "seal". Looks like I had too much caffeine today, as my lines and handwriting look too shakey to me.

Here is my version of the final cake for Wilton Course III. I made the fondant roses yellow instead of pink and I added tiny bluish dots to the small fondant dots around the cake.

This was my final cake I made for my Course 1 class. I couldn't get the top of the cake smooth, so I decided to do a spiral. I just held the tip of the spatula against the top and slowly moved it inward as I spun my cake stand. It turned out really well actually. I still need some practice on the roses, but I was very proud of how this came out. Spice cake again with cream cheese flavored icing. The roses are made with standard class buttercream icing since it seems to hold up better for them.

This was the infamous clown cake that we all learn in Class I. This was so much fun, and so much easier to learn than I thought. My kids just loved this cake.

Ok, I said I wouldn't post this... but I figured it is a nice way to track my progress. This was a blast to make, although, as you can see... there are many flaws:) I am excited to keep making cakes... This is the very first of many!

Here's my attempt at flowers and colour flow. I love the basket weave and roping but don't have the patience for flowers or colour flow - my teacher literally had to help me every step of the way with those many flowers!

This is my final cake for course 2. This was so much fun to do and the basketweave wasn't anywhere near as hard or time consuming as I thought it would be. I'm totally proud of how this turned out. I love the improvement I've made since my first class and I can't believe how easy it is!! Althought my fiance accidentally broke my fairies but hot glue worked some wonders! LOL.

First cake I EVER iced and/or decorated. I made it in the Wilton Course I. Written is "Hagerstown Magazine" because my sister worked for the magazine at the time and she wanted to take it to work with her.

The idea for this cake was santa the night before christmas eve reading his naughty nice list and fell asleep in his pj's. The details didn't really show for the camera. He had blue swirls all over his pjs.

I made this in my wilton class. I wish we had had more time to work on this cake and make it more intricate or detailed. Other than that, I'm pretty happy with it.

I decided to experiment with the "striping" technique and I completely fell in love with it! My husband thought the classes were becoming worth the money and I took the cake to my parent's house- they were completely impressed and my kid sister and her friend both were dying to eat the clowns! :)
