I made this cake to give it to my neighbour for Christmas along with other christmas goodies.  Its a carrot cake with buttercream and fondant icing.

I recently posted 2 versions of this xmas fruit cake that I was making for family and friends. Feedback has told me that many people don't like the word Christmas shortened to Xmas for various reasons and beliefs.... so with help from a fellow cake mate we decided on "joy"

Dummy cake covered with fondant. The leaves and flowers are made from gum paste.

These cupcakes were made for the kids at my sons daycare. Got the idea out of a wilton book, I thought they looked kinda cute  -  needed a larger leaf tip!

This is a chocolate cake with raspberry and Chocolate Italian buttercream. Oval pan basketweaved with 1/2 of the easter egg pan on top.   I made the following items out of gumpaste: not a creature was stirring sign, poinsettias, holly leaves, holly berries, teddy bear and ribbon.  I then dusted these items with edible luster dusts.  The following items are made out of Marzipan: mouse sleeping, mouse blanket and pillow, Christmas stocking.

This Cake was copied from one I saw on weddingchannel.com.  It was 4 10" round layers covered in fondant and painted by hand.  The gumpate pansies were painted with luster dust and the holly was purchased gumpaste.  The mushrooms were fondant as were the ladybugs.  The butterflies were edible images covered in piping gel but I never could get them to dry stiff.  The limb was Styrofoam covered in fondant.  I am still amazed by this cake.

This was a last minute cake for a Christmas party. The cake is 6" all buttercream with full and mini sized cupcakes iced in buttercream.

Two cakes I made for a christmas order. Both have poinsettia and holly.
And they both had an english fruitcake inside. Covered with marzipan and fondant.

This cake is iced smooth with buttercream icing.  Bride wanted a simple cake with holly leaves and berries.  Holly leaves and berries were made with royal icing on a pre-printed pattern on top of wax paper.  Edible pearls were coated with pearlized luster dust.

Had to deliver this cake on a Friday morning in a snow storm that closed down the public school system.  I was barely able to get out of the driveway with my car......not one holly leaf fell off....Whewww!

My daughter insisted I have a Holly Hobbie Birthday as she was my favorite as a little girl.  How could I resist. 

These are Wilton pans from the 70's I got from a seller on Ebay.  I did not have instructions so I did my best based on pictures I had seen of these cakes on other sites.

Shower cake for a friend of a friend.  white cake w/ raspberry filling.  The bride's colors are red and green.  Fondant holly & berries, gumpaste bow.

Fondant holly leaves and berries, buttercream pointsettias, fondant snowflakes with royal icing piped over them, and fondant presents with buttercream bow piped on.

Yellow cake cupcakes filled with Bailey's filling and iced with Bailey's buttercream.  MMF accents.  I had a nice little buzzzzzzzzzzzzzzzzz going while making the icing, filling, etc.  Maybe it was the little drink on the side?  hmmmm  I dunno, but it's all good!  ;-)

Wanted to practice my brush embroidery. Dummy cake. I love brush embroidery. Applied too much luster (oopsy) on middle tier. Learned can always add luster but never take off. Arrrggggg.

Poinsettia, Holly and Ivy and little cones all made out of flowerpaste. Was to go on my Christmas cake but turned out a little larger than expected, but will have it as center piece on the table on Christmas Day Instead!.

An 8 inch fruitcake which is being donated to a local scout group to raise money for their Jamboree.
Santa and the reindeer are made with modelling paste, the antlers are royal icing. This design is taken from the book "A Cake for Christmas" by Karen Davies

My mother, Catherine McClung, is the artist of some holiday dinnerware by Lenox china called "winter greetings."  She is having a luncheon tomorrow and wanted a cake to match her china.  I hope I did her proud!  I was really afraid the cardinals would look "cartoonish."  I am doing another one of these for a friend of hers at the end of the week and I think I may do something a little different on the top tier.  The cardinals are chocolate transfers.  I traced the image off of the bowl that I had.

This is an idea from a book called Making Beautiful Christmas Cakes.  It is a fruit cake covered in mazipan and fondant.  The candle plaque is made using flood icing and the holly and berries are made out of fondant.  This is my second try at flood icing and I think I made the white icing too thin as the candles are not as defined at they should be.  I am on a learning curve (as always).  Quite pleased with it though.  At least this one did not break.

Made for dh's dept party. Red velvet with cream cheese icing/filling and mmf and mmf accents.  I finally got my fondant the way I wanted it!

Finally had a little time to do a cake.  It's an 8" chocolate cake and iced in buttercream.  My middle was bulging again so I put the holly around the middle to hopefully hide it.

Got the idea from a Christmas cake done by Sheila Brooks that I saw online.  A gift for my hubby's aunt's birthday.  The bottom is a 13" round Italian Cream cake with chocolate cannoli cream.  The top is an 8" round three layer chocolate Italian cream cake with cannoli cream filling.  The MMF is flavored coconut.  Was delicious (if I do say so myself).
