My first tiered cake.  I've been asked to make the cake for my nieces wedding next spring.  It's a coconut white cake and white buttercream icing.  The centerpiece of the cake is lilacs and some baby's breath.  I made a mold for the white fondant pieces on the bottom layer.

Yellow-coconut cake covered with Italian meringue buttercream. Sides are covered with coconut and top is sprinkled with edible glitter.

German chocolate cake with chocolate icing. I toasted almonds and coconut and sprinkled on the top. I made some chocolate ganache to drizzle over the top, but well.. that didn't work out. I managed to cover the mess up with more almonds/coconut. I used corn syrup and made my left over icing drizzle worthy and just used that.

Chocolate cake with coconut filling covered in chocolate ganache. The corners and tag are white chocolate and the bow is fondant. It was ordered in the last minute (a lot less than 24hrs), so it didn't come out the way I planned, but it looked cute (with a lot of room for improvement!). It was for my sister-in-law, so it was OK!

I made this cake for a little girl who was turning 8 and had a Hawaiian Slumber Party Birthday and she wanted a Bratz cake.  All the decorations are made with fondant and painted with thinned icing color.  The doll was a bit big and hides the palm tree which was a pretzel rod covered in chocolate with fondant leaves.  The 'water' gel actually was only around the top of the bottom layer, but ended up 'sliding down' in transit. I also used graham cracker crumbs for the sand.  The girls loved it.

One of my first fondant decoration cakes my sister and I did for a friend.  We found that the gel slid way too much on the fondant, was only supposed to go on the top. The day ended up way to oversized for the cake but the little girl loved it! Chocolate covered pretzels, with cookie crumb sand, and all fondant decorations.

I was hoping that this cake would taste kinda like the Ambrosia that my mother used to make at Christmas time. It was good but I think it needed a bit more orange.

My BIL was craving a German Chocoltae cake, so I made him one. Made the coconut pecan icing myself because I always make my own icings now. Also, when I looked at WM they didn't carry it.

I had a luau for my husband's birthday and I decided to give him a hula girl cake.  It was a big hit!  Everyone loved it.  It was a fun and easy cake to make.

I made this cake for a friend's wedding shower back in July 2002.  The cake was coconut-flavored, with a lime curd filling, and my weave (buttercream) isn't perfect on the top, but it was a big hit with the guests.

In my quest to experiment with different cake flavors, this one was made with yellow cake mix, cream of coconut, crushed pineapple and of course, rum!  Icing is coconut flavored whipped cream with toasted coconut sprinkled on.    Too bad Icould not find one of those little paper umbrellas for decoration!

A birthday cake for a fun-loving woman's "39th" birthday party, to be held at the lake.  The theme for the cake is taken from the Evite invitation the hostess used.  Dark chocolate cake, buttercream icing, covered in fondant with fondant decor.  BC whitecaps on the waves.

Pineapple 3 layer cake filled with a mixture of cream cheese, vanilla pudding, pineapple and whipped cream. Cream cheese frosting. Sides covered with toasted coconut, topped with pineapple, oranges, and more coconut. It was just like eating trifle but without the mess!

My first "not practice" cakes for my grandparent's 60th anniversary. 
Not perfect, but everyone loved them. 

(I know the top tier was supposed to sit down on the big pearls, but I didn't realize the pillars needed trimming until it was too late.)

Tiered cake is vanilla/vanilla on top and butter pecan/apricot on the bottom.

Package cakes are (l to r) vanilla/coconut, strawberry/strawberry, lemon/blackberry, and chocolate/raspberry.

This was for my sister. All tiers were about 6" tall with the coconut. The bottom and top tiers are chocolate with cookies and cream filling. The middle is vanilla cake with strawberry filling. Flowers are gumpaste, purchased at a cake supply store. Thanks for looking!

Baked this cake for the overworked guys in our Homicide Investigation Bureau.  Got a special request for a pineapple/coconut cake and couldn't resist the challenge.  This is a scratch cake and it baked up beautifully.  I added about 1/4 cup coconut cream coffeemate liquid creamer to the batter.  Homemade pineapple filling and white chocolate pineapple cream cheese icing!!  YUM!!  I hope they like it.

The cake is a pineapple/coconut (pina colada).  Filling is crushed pineapple mixed w/pineapple/coconut BC, then topped with toasted coconut.  Iced w/BC pineapple/coconut then covered in pale green fondant.  Leaves were drawn & colored w/gels.  Large fairy is fondant.  Embossers were used for woodland fairies and toadstools.  This was my b'day cake; reason being a couple very dear to me gave me the woodland embossers & also loves autumn leaves.

My sister-in-law (shes 9yrs old) picked this out from the 2007 Wilton Yearbook.  Its a yellow cake, with BC frosting.  I didn't have time to make  royal icing so I did the monkey with BC.

This cake actually has palm trees in all 4 corners but the only picture I of it has a person in it.  The coconuts are snicker popables.  The palm trees are twix with peanutbutter cup tops covered in buttercream leaves.  The sand is nilla wafers.  Everything else is buttercream.  Ja Mata is see you later in Japanese.  In Japan they rarley say Sianara because it means goodbye forever.

Yellow-coconut cake (sooo good) with buttercream. 
Donated this and a MMF-covered cake to my brother's school's Harvest Carnival for the cake-walk.

Some lady kept making her kid play until he won so she could take this to her grandmother for her 97th birthday. People kept playing to try to win the two cakes I donated, and once they were gone, a lot of the people stopped playing!

Practice cake.  I have to make this cake next weekend and wanted to try it out so I took this one to my brother's house for dinner last night.  German chocolate cake iced in chocolate BC and coconut-pecan frosting.  On top are my 1st attempt at chocolate curls.  Not too happy with those.  Needs some practice.  But the cake was pretty and yummy, so a success!

I made a non-traditional Thanksgiving Day cake to please my mom.  She's a coconut fanatic, so this cake is Martha Stewart's Tea Time Coconut cake with coconut Swiss Meringue buttercream.  I finally found real coconut cream (not milk) and this cake tasted awesome!

This was for my grandfather's 93rd birthday.  A few years ago he asked for a coconut cake but ended up in the hospital before he got to eat it.  I decided to make it this year.  Coconut cake with coconut BC filling with Buttercream Dream and toasted coconut.  I was worried it would be too much coconut, but even those who aren't normally fans of the flavor loved it.

My sister requested an anniversary cake for her in-laws (their 50th but they are celebrating with another couple; thus no mention of 50 ) so I decided to do one of these poinsettia cakes again; this time white with gold accents.  My sister also requested coconut cake and I tried a recipe on CC submitted by Linda Easley.  Didn't get to taste it but it sounds great.  (and it's easy!)

The cake is covered in green tinted coconut. The "eggs" are supposed to be jello that was allowed to set a little while and then poured into hollowed out portions of the cake and then hardened in the frig.  I waited to long to put the jello into the cake so I had lumpy eggs.  The chicks are Peeps chicks (or store brand, not sure).

German Choc. Cake w/ Coconut and Pecan Icing.  Used BC for the strings, and the black icing...hard to do the strings over such a bumpy surface.  Feel sure had it all been BC like I had planned...they would have been straighter, but this fellow so badly wanted the Coconut/Pecan Icing.  I think it turned out okay, and he was so excited when he saw I had done the desired icing.
