Help---Ineed Advise About Wbh Cho Buttercream

I made the WBH chocolate buttercream and it didn't double in volume.
What did I do wrong? It tastes good and is very light, almost like whipped
cream, is this right?????

I don't know about the chocolate WBH but I make the house WBH all the time and it doubles in volume.Say would you mind PMing the recipe for the chocolate?

5 cups confectioners sugar, 1 cup cocoa (i used dutch processed), 1/2 tsp salt, 1 cup boiling water and mix on low till smooth and cool.

Then add 6 Tbsp butter and 2 3/4 cups shortening and beat at medium high for 10 to 20 mins....

I am wondering if my base was not cool enough...
I whipped first part for about 15 mins before adding the butter and shortening....It very light, just didn't make as much volume as I anticipated it would

The base might have been to warm.I pop mine in the fridge for 5 minutes to cool it down.Thanks for the recipe!!! I forgot to add...does it go a dark chocolate brown or a light brown?

It lightened up quite a bit with all the beating....Is it supposed to be sort of the whipped cream consistancy? I have never made it before...Do you think It would help if I put it in the frig now and then rewhipped it???

It will really set up in the fridge so that might be worth a try.If the chocolate WBH is anything like the house WBH it sets up quite firm and nice.When you take it out at room temp for about 15 minutes it goes back to the fluffy consistency once you stir it up a bit!! I love this icing ...I use it for all my cakes!!!

Oh Yeah, It is smooth and fluffy and very easy to smooth and work with.once it is refrgerated it becomes quite firm but softens once the cake is out of the fridge for a bit!!

Ok...Do you rewhip when you take it out of the refrigerator? Also, I think I forgot to say there is a tsp of vanilla also....I think it is going to be a really good icing...Will it hold up out of the refridgerator once I put it on the cake or do I need to keep it in the refrigerator....Also will it hold up for regular buttercream decorations?

Cindy if you are very unsure about this recipe.. you can call the bakery and the people there will be very helpful. I had a question about one of their recipes and I called them, I actually talked to Kaye and she was very nice. I have the phone number if you want it.

The icing doesn't need to be rewhipped when you take it out of the fridge but it will be stiff for a few minutes and then it softens.It holds up really well but it can get soft in your hands if you are piping it for a long periood of time in which I just pop it into the fridge to cool for a bit.
