Well,
Since everyone else has jumped on this bandwagon, thought I would to. I live in Mesquite, which is a small city outside of Dallas, TX. I would love to hear ideas or to find out if anyone knows of licensed kitchens in the Mesquite area.

I think you will have to look pretty hard. There might be some churches, but Mesquite has grown tremendously and has a ton of big restaurants, and that would not work. However, there might be some mom and pop places that have survived the growth. The mesquite health dept, is tough! Also, you might be paying a high dollar for space. Everything in the DFW area has gone sky high. I know a guy that got a space in a strip center in Rockwall and it cost him, 6,000 a month, plus insurance, and maintenance for 1500 square feet. That doesn't include help, utilities, taxes and the such. Thats tough on a new business. Needless to say, he was only able to make it for 6 months. Of course Rockwall is a little more high dollar, then Mesquite, but I bet not far. You might find a small place to lease, but anything close to Town East will be high.
