Red Velvet "cake Ball" Layered Dessert

I had tried out 3 different red velvet cake recipes this weekend and had TONS of cake! I had read about the cake balls but really didn't have time to do that. So instead, I made a "cake ball" dessert!

I mixed the cake with cream cheese icing.

Smashed a 1/2" layer of the cake mixture into a 9x13 pan, pressing down with waxed paper.

Put a thin layer of "cheesecake mousse" (heavy whipping cream & cheesecake flavor instant pudding)

Smashed another layer of cake.

Put a thick layer of cheesecake mousse on top of this.

Sprinkled some mini cake balls on top

I wanted some more cream cheese icing so I did cornelli lace all over the top of it.

Very good and very rich!!
