You can touch the MMF and decorate on a cake immediately after you apply it. There really is not drying time required. However, if you're using it for flowers or something else, you'd have to dry it for about 24/48 hours. I add tylose to mine to make it dry harder and faster. I wouldn't suggest refrigeration. It will sweat when you take it out and that could possibly make it fall from the moisture.
I was trying to write on it with the edible food markers and I had problem with it tearing earlier. Earlier I tried making a ribbon and when I wrote the marker caught. I figured that it must be because it wasnt dry enough.
..it really isn't necessary to freeze it, even if you aren't going to use it right away. I keep mine in the fridge but I've read where others store at room temp!
I can see what you're talking about now.. and yes, if you didn't let the MMF set for awhile and you were trying to write on it, it would tear as it's still soft right after application.... I've never frozen my MMF, nor have I ever refrigerated it... I suppose you could, but I wouldn't try it
