Refrigerate Mmf ?

Does MMF Refrigerate okay? If I decorate a cake tomorrow night will it hold in the refrigerator overnight until Friday afternoon? I am making a draped flag look and will need to refrigerate the cake once its complete.

Unless you want condensation to form and make the MMF shiney i wouldn't do it.

It should be OK. When you take if from the refrigerator, if the room is very warm, you will get condensation. If you don't touch it at all while it is coming to room temp, it should dry fine.

I've never had a problem with refrigerating it. I have done colors too and haven't seen anything bleed.

I did it just this weekend with red and blue Wilton colors and my MMF was just fine. But it's very important that you don't touch it as it comes back to room temperature, just like JoAnnB said. You will never be able to get the fingerprints or marks off your fondant if you do.

How long would you think that it needs to be at room temperature after pulling it out of the refrigerator?

Well..I would love to be able to give you a specific time, but it really just depends on the size and density of your cake and the thickness of the fondant. I left mine out for about two hours, if that helps. (my fondant was rolled about 1/8" thick and the cake was very dense.)
