I have a wedding this Saturday that I am making the groom's cake like a snare drum (I have been asking a lot of questions and getting a lot of help). Here's one more question ...could I make the cakes tomorrow (Tuesday) and put simple syrup on them and wrap and just keep in the frig? Would that be to early?

I think you should make em, put simple syrup, wrap and freeze them. Take them out several hours before you need to decorate. I freeze all of my cakes and they come out with a great texture and crumb. They are always really moist too.

I have never used syrup...just use a crumb coat to cover my cakes.

You can do them tomorrow and freeze, when thrawing out, will make it even more moistier.
