I have a cake order that needs to be complete in 1 hour and have had big problems. To cut right to the point and latest disaster.... I just split my cake and filled it with chocolate mousse. However, the cake was still pretty hot, and some of the filling started to melt and ooze out the side. I just stuck it in the freezer, but I need your opinions. Do you think that once the mousse hardens again it will be fine? Or do you think that when they cut into the cake it will be all messed up inside? Please help me, I am trying not to have a breakdown! Thanks

My guess is the filling will slightly harden since the temperature of it was raised...I have never done this so I'm not sure..Wish I had a better answer for you!!

I'm guessing that it will depend on the recipe for the mousse. Can you take the cake apart to see what the mousse looks like, if it doesn't look good scrape off and try again.

Well, I let the cake stay in the freezer for a long time and then just decorated it like nothing ever happened. It looked really good, and the girl called me that night to thank me and tell me that everyone loved it, even the caterers had some a loved it. What a relief! I guess I freak out for no reason some times. But I learned my lesson on procrastinating and taking an order for the day after I get back from a vacation. O well!
