Hi Every1,

Most of my cakes are 8 inch rounds baked in 3 in pans. I torte them and fill them so they come out very tall. I always bake from scratch. My last few customers have said they feel like they are getting such a steel from me and it made me wonder....am I undercharging????? I know my current customers would pay more, but would new customers shy away from a more expensive cake. I charge $30 for an average cake....please look at my pictures to get an idea. I charge $15 per dozen for cupcakes, and I think that is fine, it is the cakes I am worried about. I am in North Texas by the way, and the local bakery charges $25 for a plain 2 layer cake.

Thanks for all of your inputs!!

So you are baking two, three inche deep cakes right? I think I would charge more. I charge $60 for a 10 inch round, 6 inch high, if that helps any. Actually, your cupcakes sound low to me too, depending on how you are decorating them.
Just took a very quick look at your cakes and they are fabulous kiddo! Perfect work.

Thanks Squirrelly,

I am baking 2 8x3 inch cakes then splitting them in half giving me 4 layers. Do you think $45 would be better, and do you charge more for candy melt decorations?

Berta,
I'm just east of Dallas and I think that you probably are undercharging. That price wouldn't be bad if it were just for a round 2 layer cake. That's what I charge for that. I would add $5-10 more for 4 layers. I think the cupcake price is ok unless decorations were really a big deal. I have found (at least in our area) people won't pay very much for cupcakes b/c the ole grocery store attitude. They wouldn't mind paying good $ for a nice good cake, but not cupcakes.
Also, as far as the candy melt decorations. I usually say that my prices include "basic" decorations and anything else may be extra. Then I just gauge at home much extra work a decoration may take. The charge based on the extras. Hope that helps! I PM'd you too by the way!!

I usually include the candy melt decorations in my price of $60 for a two layer, six inch high, 10 inch round. Sometimes, though, I charge the same even when there are no candy melts, depending on if I did a buttercream transfer or something like that, that takes more time to do. I think I would definitely go $40-$45 for this size and vary according to the degree of difficulty of the decorations and how many candy melt decorations are on the cake. If it is a simple decoration, go for the lower price. If it is complicated and time consuming, go for the higher prices. Those candy melts can add up in cost when you factor in the cost of the molds, melts and the amount of time they take to make.
If your cupcakes are complex, with special flowers or decorations, I would most definitely raise the price. These usually range from $2.50 and up, depending on the degree of difficulty in decorating. But as Mamafrogcakes suggested, if they are simply iced cupcakes, people tend to price closer to grocery store prices. Personally, I find cup cakes time consuming.

Thanks for your inputs. I think I will increase my price to $40 for new customers from now. I will see what their reactions are to that.

Mamafrogcakes.....got your PM....I wrote you back!

Did you see the cupcakes in my pictures? I don't have any spectacular decorations, but I do use a lot of frosting....and you are right they are time consuming. I charge $15/dozen because they cost only $8 at the bakery but all they do is spread the frosting on with a knife. I'd like to charge more but I know people will think they are only cupcakes....Pricing is a hard thing for me to decide upon.

Wow, they remind me of the old days when the people serving soft serve ice cream, made them really super decorative. I think those are worth even more than what you are charging because you are correct, they are loaded with icing and very well done, I might add! Now I am hungry! Heehee, I am one of those people who thinks that you can never have too much icing!
