OK. MAYBE NOT SUCH A DISASTER, BUT ITS NOT THICK ENOUGH TO STICK TO THE SIDES. ITS ALMOST ROOM TEMP ALREADY AND THE COCONUT IS IN. THEY CAN'T HAVE NUTS, SO NO PECANS. ANY IDEAS? I THOUGHT OF COOKING IT MORE, BUT CAN I WHEN THE COCONUT IS ALREADY IN? OR ADDING CORNSTARCH OR A SLURRY? WOULD ADDING MORE COCONUT HELP? IT IS MISSING 3C. OF NUTS SINCE I HAD TO OMIT THEM. I NEED TO GET THIS DONE IN THE NEXT 2 HOURS.

Can you ice the cake in chocolate and then put your special icing just on the top?

I just did a german chocolate cake today and just filled it and frosted the top....not the sides. See in my photos. Maybe this would work for you!

Derby is right. A German's Chocolate Cake is not normally frosted on the sides. The icing is definitely too heavy. It can be done with smaller cakes, 1 tiers, as I use it on the Wilton football every year for the annual Super Bowl party we attend.

Try warming it to a thinner consistency before applying. That is the only thing I can think of, if she really, really wants the icing on the sides, too.

yeah, the frosting is just too chunky to put it on the sides. There's no way that it would stick! I hope that our help isn't too late for you!

THANKS EVERYBODY. I KNOW ITS NOT USUALLY ICED ON THE SIDES, BUT SHE REQUESTED IT THAT WAY. I LOVE HOW IT LOOKS BARESIDED MYSELF, BUT SHE'S PAYING... SO I SEALED AND WRAPPED IT UP AND PUT IT OUtside to firm up (ooh, my caps lock just popped back! darn broken computer!)since its abouT 6 DEGREES (DARN ITS BACK) WITH WINDCHILL BELOW ZERO. IT WORKED BEST AS ANYTHING COUld i think. i managed to get it on and told her to keep it chilled. i hate letting a cake go undecorated too but she didn't want anything else on it. she already said she'd want one next weekend too, so we'll see if she changes anything.
