Is it necessary to refrigerate a cake with chocolate ganache filling? I would assume so, since it's basically whipping cream and chocolate, right? Thanks!

I am sure I heard it can be room temperture to because of the sugar in the chocolate... when I searched ganache on internet I found this little blurb to make me think it doesnt have to be.

"If cooled to room temperature it becomes a spreadable filling and frosting. Refrigerated ganache can be whipped for fillings and frostings or formed into truffles."

thats from this site.. http://justcooking.blogspot.com/2005/03/chocolate-ganache.html

Ganache is "safe" at room temp, but whipped ganache can get quite soft if the room is very warm. If it is a heavy layer, watch out for the filling to soften. I haven't had any problems with the individual cakes I fill and keep and room temp.
