I would like to have a delicious Pineapple filling that has more actual pineapple bits in it. The ones I have found are mostly jelly like. Any one with a recipe to share is welcome.

here is one that I use. It is really good.

Pineapple Filling


Yield

2 2/3 cups


Ingredients

3 tablespoon all-purpose flour
20 ounces crushed pineapple undrained
1/2 cup granulated sugar
2 tablespoon butter or margarine


Directions

Combine flour and sugar in a small saucepan, add pineapple and butter. Cook over medium heat, stirring constantly, until thickened. Cover. Cool to room temperature.

Here goes my recipe for Pineapple Jam:

1 (20 oz) can of crushed pineapple
Juice of one lemon
1 1/2 cup of regular sugar
1 tsp. of apple pectin (mix it with the sugar)

Drain the crushed pineapple, place all ingredients in a pan and stir on low fire until it thickens a little bit. Take it away from the stove and let it cool down. Place it in the refrigerator, it will last about a week as long as it's kept refrigerated. The apple pectin, adds nice consistency and adds a great taste to it.

I've actually just boiled the contents of a can of crushed pineapples with a little corn starch..and made my filling that way.

Make a little slurry with a little juice and corn starch...just a little bit...

cook.

Cool..as it cools it will thicken.

Psurrette, do you use fresh or canned pineapple??
Does the pineapple in the buttercream make your cake soggy or get runny after awhile? How far in advance can you put the b/c and pineapple into your cake??

I just posted this one recipe I found for someone else here... Its pretty good and thick.. YUMMY! icon_biggrin.gif


Pineapple Filling
1 (13 ounce) can crushed pineapple
1/4 cup granulated sugar
2 tablespoons cornstarch
2 tablespoons butter
Cook pineapple, sugar and cornstarch until thick. Add butter while warm. Cool before using.

I love Pineapple. I made Pineapple up side down cake but I never made filling for cake.
