Storing Buttercream Icing

How long can I make BC Icing ahead of time. I have a cake to make for Thrustay and would like to make the icing this evening. Would the icing be ok until Wednesday or Thursday?

I think you're alright. at least I hope so as I just made icing for a cake I'm making on wednesday icon_redface.gif

Buttercream keeps in the fridge for a couple weeks no problem. I normally have to add a tablespoon of water and rebeat it for a minute, though.

If you are making BC with only crisco or veg. shortening, you don't even have to put it in the fridge...nothing to spoil in the icing.
If you have butter in it, I would put it in the fridge but it can stay out hours and hours with no problems...

You'll be fine. Just stick it in the fridge until you need it and re-whip it before you use it.

I froze some buttercream about 2 months ago and I'm thawing it out to ice some cupcakes. It seems perfectly fine too. Now I know what to do with my left-over icing (that is instead of eating it...which is what I normally do!!!) icon_biggrin.gif

I'm glad I stumbled on this post, I usually just throw my icing away which is minimal. I always assumed it would get stale since it contains milk and butter and then I stress over doing everything the day of. Thanks everyone!

I had icing that I had in an airtight container in my deep freezer, and I took it out, how long can it stay out? I was under the impression that BC could be left out without having to be in the fridge... is that right?
