Hello!

My niece finally decided last night that she wants a fondant coverd wedding cake with the diamond pattern made into it. Everything sounds lovely except for one, no, make that two things...I have never worked with fondant and have never done a diamond pattern on anything. HELP!

The wedding is December 3rd and I need some good advise...quick. I really don't even know what I need to ask, so if anyone could just shoot some ideas or experiences my way I would more than appreciate it.

There was just a post on getting a dimond pattern this past week. You might want to look it up. I've never done one, but I've been really wanting to get a diamond impression mat. It's already marked out and you just press it into the fondant to make a pattern.

As for working with fondant... get started now practicing the technique. Just try it on a 6" or 8" until you get the hang of it. A really good tip is to put your cakes on top of a smaller cake pan. This raises them up and lets the fondant hang past the edge of the cake. This will help keep you from getting bunching at the bottom.

as far as "quilting"....they sell impression mats that are probably the easiest to use....or you can use a "pouncer" that dressmakers use or you can do what I do and gently press a ruler's edge in diagonal equal parts....I do this freehand but you can certainly measure your spaces, too. I'll see if I can find instructions for this. It's funny....I think there was a subject about this very same topic this morning.

I can help you with the diamond impression mat. It is SO easy to use. They are plastic mats that you just press against the sides. I've always used mine on a crusting BC as well. You can find them at some cake supply stores or online. VERY addictive! Good luck!
