Please help I will be making a cake this coming weekend I want to deorate the top of the cake using grapes that look like they are frosted with ice I was told to wash and dry my grapes the dip them in egg whites and then roll the grapes in fine sugar I did some of them look like the sugar has balled in clumps please help I need advice on this matter

I have never done these but maybe there was too much egg white and not enough sugar? Maybe thin the eggwhites with some water.. I dont know but IMO the thinner the eggwhite, the less likely lumps.. I think I will try these soon too.. Good luck and let me know what you find out.

I did crystallized grapes once & it turned out quite well. You need to wash the grapes & dry them thoroughly. Lightly whisk the egg white & use a clean painbrush to paint the eggwhite very thinly over the grapes. It takes awhile but the results are good, you wont get the clumpy sugar look. Then sieve the fine sugar over the grapes making sure youve covered all the surfaces. Then just shake of the excess sugar. I hv a photo of the ckae i did but i dont know how to attach it here. Thank You both for your help I have a question for millionairess Did you have to put your grapes in the freezer to freeze them before you used them and how far ahead did you make your grapes the same day you decorated your cake are a few days before I wish I could see your cake.

I didnt freeze the grapes, just made sure it is thoroughly dry, coz the sugar will melt if its wet & u will not get the ice effect. I made mine in the morning for an evening event, so i guess a couple of hours will do. But, it depends on the humudity as well, i live in Asia , tropical climate so it will dry a lot quicker. I did freeze the strawberries first & that was abig mistake, coz when i took them out , it started to sweat & soon i couldnt see the ice effect at all, just shiny from the melted sugar.I cant seem to attach the pic, coz the size is too big. If u get to see the cake , u will notice quite a bit of sugar on the grapes, so i suggest to sieve it sparingly over the grapes, u might get a better effect.
I used about 2 tsp of meringue powder to about 3 cups of water. Washed and dryed the grapes, then dipped them in the water bath and then sifted sugar over them. After they had dryed somewhat, I turned them over and sifted sugar on the bottom. I did this several times. I did this about 2 days before I needed them for a cake. On the second day I check to see if there was any wet spots and sifted more sugar over the wet area.
I did not refrigerate them, because when after refrigeration, with the warming process of getting them to room temperature, condensation could occur and cause the sugar to melt.
Not only did they look really beautiful IMO, They tasted really yummy.
