I made a cake for an event in our city where you had to use apples. Made the most tasty carmel apple cake. But, couldn't use buttercream cause cream cheese and apples go together right? Not when you are decorating icon_cry.gif

To make a long story even longer.......all went fine, got the basket weave on, the rope border on the bottom but when I started the top border the icing rope kept drooping icon_cry.gificon_cry.gif twice I had to try and get it off without messing up my basket weave. OMG what a mess, I was a nervous wreck. Finally put in the frige off and on and got it to the judging. Will find out tomorrow if I won anything. But I did learn, DO NOT DECORATE WITH CREAM CHEESE ICING thumbsdown.gif

I have had several customers ask about decorating a cake in cream cheese frosting--I don't recommend it. Did a wedding cake with and traveled 45 minutes. It was the leaning tower of cake (and this was unassembled for the travel).

Cream cheese icing is softer, but the crusting recipe from here works rather well. I'm not sure what recipe you used, but maybe try that one next time. icon_smile.gif

I will definetely try it nest time. I just used the butter/cream cheese recipe and added extra powdered sugar.

I made some cream cheese icing a couple of weeks ago. I had several cakes that weekend...so I ended up adding some cream cheese to my buttercream frosting. I added a little bit at a time until I could taste the cream cheese. I wanted to make sure that it would still crust and decorate. It worked fine and tasted pretty good too! icon_smile.gif

cheryl - Which recipe is the crusting one? I searched but did not come up with anything. I have a carrot cake to do this week and want to use cream cheese frosting but need it to crust. Thanks for any help.

I also had a problem with the creamy cream cheese recipe this past weekend. It was too soupy. I put it over the top of the cake, because it would have run down the side and off the plate. I made some lemon butter cream icing to make my flowers with because I could not use the cream cheese at all for any decorations. I have researched and looked for a better recipe, I have looked for the "Crusting" cream cheese recipe and cannot find it. Can someone post a link on it?
