Need Help Decorating A Italian Cream Cake

Please help I want to make a Italian Cream Cake but I want to Decorate it with just more then frosting and nuts I thought about putting chocolate dipped strawberries but I dont think that would be a good mix then I was thinking about the sugared fruit I was told if I dipped grapes in apple juice and in sugar once they dried it would be a nice decoration for the top does anyone have any other ideas I could use for the top of a Italian cream cake Im making this for a friend and I really want it to look nice. icon_biggrin.gif

I have dipped strawberries in white chocolate for an Italian Cream Cake or what about cinnamon sugared pecans--just a thought--these are addictive, tho.

I got this recipe from Cheryl (ntertayneme) - it's great!


Sugar Roasted Pecans

1 egg white
1 tablespoon of water
1 pound pecan halves
1 cup white sugar
3/4 teaspoon salt
1/2 teaspoon cinnamon

Preheat oven to 250 degrees. Grease a baking sheet (I used Pam cooking spray and this worked for me). In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt and cinnamon. Add pecans to egg whites; stir to coat the nuts evenly. Remove the nuts and toss in the sugar mixture until coated. Spread pecans out evenly on greased baking/cookie sheets. Bake at 250 degrees for 1 hours stirring every 15 minutes. DO NOT FORGET TO CHECK OFTEN AND STIR!!!.

I have made these 2 different ways:

1 cup sugar
1 1/2 tsp. cinnamon
4 cups pecans (or mixed nuts)

Melt butter and coat pecans in melted butter. Then roll in sugar/cinnamon and spread on greased baking sheet. Bake at 325 degrees for 20 minutes, stirring occasionally until golden. Cool thouroughtly and store in airtight container.

Another variation: Spiced Pecans (Nuts)

1/2 cup brown sugar
1/2 cup sugar
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/4 tsp. ground cloves
1 egg white
1 tsp. water
4 cups of pecan halves or mixed nuts

Combine spices and sugars in small bowl
Beat egg white and water in medium bowl until frothy. Add sugar mixture and stir.
Add nuts and stir. Spread on greased cookie sheet and bake as above.

Sorry, forgot to add that the egg white and water make the pecans a little more crunchy than the butter recipe. I think I will try Cheryl's recipe

OOH! Those sounds yummy! I'm making an ICC next week but they want it golf themed. I'll have to remember this for another time!
