Hello Everyone,

This is my first time posting a message on the general forum so hopefully it works.

I need to make a birthday cake for a two year old girl for this Sunday. The mother has requested a white sponge cake with a filling of fresh strawberries and whipped cream. She would like the cake decorated with a princess theme.

I need suggestions on what would taste best for the outer layer of the cake - buttercream, fondant, or ... ??? Also, can I cover the cake with whipped cream and then put fondant over it?

Your suggestions are greatly appreciated. Thank you.

Hi Claudia,
I would use buttercream to cover the cake. Fondant would also work but I don't think it will stick to whipped cream because it will melt. And remember that fondant also cannot be put in the fridge, so this might be a problem for your filling. Maybe someone else can give you their input on that. I've never made a cake with strawberries and whipped cream filling so I'm not sure if it will work with fondant. You can cover it first with buttercream and then add fondant so the choice is really on what you prefer. Just keep in mind that fondant cakes are usually more expensive than buttercream so it may also depend on what the mother is paying for the cake.

I agree with Daniela. Many people do not like the taste of fondant, so I would go with the buttercream. Good luck! icon_smile.gif

I like using whipped cream on my outer layer when I make a cake with fresh strawberries. The only problem I have is that I cannot smooth it real well and it is hard to decorate with because it melts fast. I don't think it would work with fondant either, but I am not real experienced with fondant. The baby shower cake in my photos is made with whipped cream.

Hi,

I've made cakes with whipped cream fillings and then used the same whipped cream for the outer decorating. I do use a stabilizer in the cream when beating it and that holds the shape perfectly. The cream also tends to last longer and does not melt.
